Chekralu or Seasame Muruku(Indian Famous Snack)

I love this one..
Ofcourse Kids enjoy
Ingredients

2 cups rice flour
1/2 cup uradh dal flour
salt
Ajwain seeds
seasame seeds
ghee
oil
water
chilli powder
muruku machine
zip log cover

Preparation:
1.Take rice flour roast it without burn it too much
2.Take uradh dal and roast it (flour should be bit heat)
3.Take two flours mix with salt.
4.Now add chilli powder, ajwain seeds, seasame seeds.
5.Add butter or oil make nice dough.
6.Take a kadai pour oil and heat it on medium flame.
7. Take zip log sheet or aluminum foil keep some dough on muruku machine make chekkralu on zip log sheet later with the help of your hand shift into oil..
8.Fry it until it turn nice color.
9.Remove from oil and place it on tissue towel and shift to tight lid container.

Chicken Sandwich

The easy and healthy food is making sandwich. Generally my kids try to remove the raw vegetables, this is best source of raw veggies to kids.

Ingredients

Sandwich bread slices -2 (You will get in super market)
Cheese Spread (you will get in Cheese section)
lettuce - thin slices few (fresh lettuce i use)
Cucumber thin slices -3 or 4 (fresh cucumber i use)
Tomato slices (thin) 3-4 (fresh organic tomato i use)
Cheese Slice - 1 (you will get in cheese section)
Thin Chicken slices  (you will get in meat section)

Preparation:

Taka Non -Stick tawa heat on low flame meanwhile

1.Take a cheese spread and apply very light cheese spread on inner sides of bread slices (to stick veggies well by that kids never remove the veggies seperatly)
2. After that keep lettuce, cucumber, tomato slices layer wise.
3.Now add chicken slices to next layer.
4.Add cheese slice -1 (low fat)
5.Close with other bread slice.
6.Compress it slowly with your hands by that sandwich become very thin next toast both sides of sandwich on low flame.
7.It gives crispy so kids love it to eat. just cut into two slices..

One sandwich is sufficient to one adult and one sandwich will come to 2 small kids like below 5 year kids.


Note : If  you don't have cheese slice you can substitute with shredded cheese.. here i use very less cheese that helps to stick the raw vegetables to bread..


I usually serve this sandwich with fresh homemade cup of Orange Juice very healthy and tasty..

Rajma Masala

This is another North Indian dish

Ingredients
ginger
soaked and boiled kidney beans
jeera seeds
curry leaves
red onion medium size
tomato - medium one
rajma masala
salt
oil
turmeric
green chillies

Preparation:
1.Soak kidney beans over night and boil in pressure cooker
2.Take a vessel pour oil add curry leaves, jeera seeds, crushed ginger, curry leaves fry it well
3. Add red onion slices and fry well
4.Add cooked kidney beans and mix well and let it cook some time.
5.Add turmeric and salt last add tomato slices mix well and cook some time.
6.Add rajma masala (Depends on your flavour).
7.Cook 5 min and turn off garnish with cilantro.

Serve hot with chapathi

Chinese Chicken Fried Rice

I always select easy items in the morning bcoz i have very less time to pack my husband box.

And i love this dish came well..

Ingredients

Boneless chicken pieces
ginger garlic paste
salt
pepper
vinegar
egg- 1
chilli sauce
ajnamoto
soya sauce
spring onion
garlic cloves
cup of veggies
1/2 green and red bell pepper
Cooked rice
Turmeric (to clean chicken)
pinch of food color


Preparation:

1.Take Boneless chicken cut into small pieces and apply turmeric marinate 5 min nd clean with fresh water keep aside.
2.Take ginger garlic paste, food color apply to chicken.
3.Taka non stick vessel fry the chicken pieces with the help of oil, salt and pepper.
4.After well fried keep aside.
5.Now take cooked rice (if u r freshly cooking add some oil and salt).
6. Take a egg break the shell and beat the egg pour top of rice.
7.Take another vessel pour oil fry the garlic slices and then add cup of vegetables fry it well.
8.Add salt, vinegar,pepper to it and fry well.
9.Now add green and red bell pepper slices fry it well.
10. And at last add chilli sauce, soy sauce, ajnamoto turn off the flame.
11.Take another non stick vessel pour oil fry the rice(which we pour egg)  fry it well when you egg is cooking with rice.
12.Now mix all the vegetables, chicken to it mix well and fry it again.
13.At last keep spring onion slices to it..
14.Serve to your family.

Plain Parota

My husband love Plain Parota but i was very poor in making parota finally i tired with simple recipe it came well.. If you guys have electronic roti maker then it will came very well.. Right now i don't have roti maker i just used my hands and wood regular roti stone and stick.

I usually serve this parota with chicken or mutton kurma.

Ingredients

2 cups of All purpose flour or maida
pinch of salt
baking soda
warm water
butter or oil


Making Dough

Take a all purpose flour mix salt, baking soda first later add butter mix well that it spread equally and later add warm water to make dough. And close it wet cloth for  1- 2 hours.


Making Parota

Take Roti maker place some oil and take onion size of dough and role it as long as it spread.
Later fold this side up and that side down again up and down, it give layers on top of parota and again role it into circular direction and then again take some oil and role like chapathi.

Take tawa fry this parota with the help of butter or oil..

Chicken Burger

This is also one easiest breakfast but here we don't use chicken patties(it's heavy in the morning) so i use chicken slices..


Serving size 2 burgers will come to 4 people for their morning breakfast

Ingredients

Burger bread
mayonnaise
cucumber slices
tomato slices
lettuce
cheese slices -1
chicken slices 2-3

Preparation:

Take a burger bread and cut into two layers
Apply mayonnaise both ends of the 2 pieces
Now sort the cliced veggies on top of it like one layer cucumber other layer tomato other layer cheese other layer lettuce and other layer chickn slices and close with other bread slice and press it microwave 1 -2  minutes and serve..

Crispy Chekkalu (Andhra Famous Snack)

Today i got some time and also want to eat some Indian snack.. I choose chekkalu which very easy and crispy

Ingredients

2 cups of rice flour

2-3 green chilli
1 inch ginger
curry leaves
soaked chenna dal
roasted peanuts (pealed skin and roasted split peanuts)
water
salt
oil

Making Dough
1.Take a big bowl add rice flour .
2.Make a a paste of chilli, ginger, curry leaves.
3.Add the paste to rice flour and add soaked chenna dal.
4.Roast the peanuts on low to medium flame peel off the skin and split into 2 pieces each and mix all together with the warm water make a nice dough..
5.Take a plastic or plastic ziplog cover keep small amount of dough and make it circular shape fry it in oil.




Note:
Water plays major role and frying time


After coming to Australia i tried with white Rice flour which comes bit white crispy chekkalu than the previous picture in this reciepe.


Malai Kofta Curry (mixed vegetables with White gravy)

I love malai kofta i still remember the days when i first taste malai kofta curry in Hyderabad Mallika Inn Restaurant (same name of me but that is not my restaurant hehe) which is newly started in Dil -shukh -nagar in 2004.

Serving size 4 people
time  1 hour (for first time people)

According to my recipe divided into 3 parts

1.Making Kofta
2. Making White Gravy
3. Making Malai kofta curry

Part 1
Making kofta is the major part in this dish

Ingredients

Boiled 3 medium size potatoes
Grated paneer
cahews
raisins
small cup of mixed veggies (boiled and mashed)
2 bread slices
bread crumbs
salt
sugar
cilantro


Preparation:

1.Pressure cook the veggies on low flame until get 3 whistles
2.Grate the paneer and keep in bowl
3.Take a mashed veggies (use more potatoes otherwise tough to make balls) mix salt and cilantro, sugar
4. Now bread slices dip into water and squeeze the water and mix with the mashed veggies
5.Apply oil to your palm take mashed veggies a small lemon size and keep shredded paneer, cashews and raisins inside the ball and make a ball with the help of bread crumbs and slowly fry it well carefully.
6.Keep aside.

Part 2 : Making White Gravy

Ingredients

1 big white onion
cashews soaked in water - 30 minutes make a nice paste
cinnamon
ginger garlic paste
2 cardamon
green chillies -2
salt
sugar
black pepper seeds - few
1 cup curd
melon seeds few (optional)
pinch turmeric
1/2 tbsp corn flour
cilantro
bay leaves
cumin seeds
khoya or other substitute

Preparation:
1.Boil the onion,green chillies,cinnamon, cardamon,pepper with 1/2 cup of water and make a paste
2. Make a paste of soaked melon and cashews and keep aside.
3. Take another pan pour oil add cumin seeds, bay leaves and addmashed onion masal paste at last add ginger garlic paste, add turmeric and fry it well
4. After frying the above ingredients add khoya to it and mix well
5.Now add cashew and melon paste to it.
6. Now garnish with cilantro.
7.Shift this into separate bowl and keep aside.




Note  :If u get more white gravy keep in refrigerator and you can use for other Punjabi dishes below 1 week

Part 3 Making Malai kofta curry

Ingredients

sliced white onion
White gravy 2 cups
butter
ginger garlic paste
salt
sugar
dhania and jeera powder
garam masala
kasoori methi
turmeric
fresh cream(I didn't use in my picture)
green chillies
cumin seeds
curry leaves

Preparation:

1.Taka a pan pour oil  or butter add jeera seeds, curry leaves, sliced onion and fry it well.
2.Add ginger garlic paste,turmeric, green chillies, dhania and jeera powder, garam masala
3.Fry it 1 min add 2 cups of white gravy to the existing masala.
4.Add other ingredients and cook under low flame until.
5.If u feel gravy become very thick add 1/2 cup of milk and cook.
6. Turn of the flame and garnish with cilantro


Just before serving take a microwave bowl reheat the gravy for 1 -2 minutes and keep the koftas in gravy otherwise kofta balls will become saagi.


If u don't like white gravy u can add turmeric or food color i like white gravy for kofta

Here i used frozen parotta with malai kofta curry

Veg cheese burger

Kids love every day different variety so i go one day with dosa, idly, poori e.t.c other day do noodles, soup, burger, snadwich e.t.c

Very easy we can prepare in minutes

Ingredients

Burger bread
cheese slices
tomato
cucumber
lettuce
mayonnaise

Preparation
1.Take a Burger bread cut into two half slices and apply mayonnaise one end (optional if u want more your can apply both sides too).
2. Now keep thin slices of tomato, thin slices of cucumber, lettuce and cheese slice.
3.Close with the other part of bread and eat.
4.If you want microwave it for few minutes and eat.

Redsnapper Curry with plain rice

One of the tasty fish is Red snapper, my kids love it well ofcourse it will half bones to..

Ingredients
1 full red snapper fish
1/2 big red onion
1 small tomato
2 garlic cloves
few fenugreek seeds
onion size tamarind soak in water take the juice
curry leaves
chilli powder
coriander powder
salt
oil
pinch of cumin powder
coriander leaves
Turmeric powder

Preparation:
1.Heat the kadai pour oil add mustard seeds, fenugreek seeds, curry leaves, chopped garlic cloves fry it
2.Add chopped red onion fry it well.
3.Now add tomato slices and fry well.
4.Mash everything with the help of mixy
5.Take fish and cut into nice thin slices
6.Apply turmeric powder to it and wash it after few minutes and keep aside.
7.Take kadai again fry the mashed masala and add tamarind juice and let it boil some time with salt, chilli powder, coriander powder, cumin powder.
8. Now reduce the flame add red snapper fish slices and close the lid on low flame like 5 -10 min depends on your flame.
9.Garnish with coriander leaves..

10.Yummy dish ready

Veg Pasta

I love Italian food like Pasta, Pizza, Egg plant Paramesan e.t.c

I prepare this dish with less cheese with more veggies
Ingredients
olive oil -2 teaspoons
garlic
cup of veggies
2 cups of Macaroni (shape is optional)
salt
milk
shredded cheese
2 tomato long thin slices
raagu or Pasta tomato sauce
ITalian herbs like basil leaves, oregano, parsley e.t.c(According to your taste and intrest)
water
pepper

Preparation:
1.Take a big cookware pour water boil it and add the macaroni to it boil it with closed lid until macaroni become soft.
2.Turn off the flame shift the macaroni from hot water to cold water wash it and keep aside
3.Take a another non -stick cook ware add olive oil add chopped garlic to it now add veggies and some tomato slices fry it until vegetables become cooked.
3.Now add cooked macaroni and stir well with italian seasoning  , salt, pepper, tomato slices.
4.Now add 2 cups of milk to it content let it cook some time.
5.Now add pepper and pasta sauce and stir well.
6.At last add shredded cheese (i use less cheese and more milk) wait until the cheese get mix well.

Ready to serve we have to eat these type of food hot and hot

Palak Paneer

Again one more 'North Indian Dish'. I love this dish alot with jeera rice, come on we will try this.

Ingredients
1 bunch of fresh spinach
1 white onion
ginger garlic paste -1/2 teaspoon
10 -15 paneer cubes (Depends on your taste and requirement )
cumin seeds
2 green chillies
2 red chillies
curry leaves few
pinch garam masala
few kassori methi
salt
oil
turmeric powder
coriander powder
chilli powder

Preparation:
1.Peel the onion and keep aside.
2.Take spinach bunch and wash in water remove the sand, dirt, e.t.c.
3.Take a pressure cooker keep peeled onion, spinach leaves,2 greenchillies pressure cook on low flame until get one whistle.
3.Other side take paneer (i used fresh paneer) cut into cubes equal size and fry it in oil keep aside.
4. Now mash the boiled onion and make it paste keep in bowl.
5. Now mash the spinach and chillies with pinch of turmeric powder keep aside.
6 Take a kadai pour oil add cumin seeds, mustard seeds(very few), red chillies, curry leaves and fry it little bit.
7. Now add ginger garlic paste fry it well.
8.Now add white onion paste fry it well.
9. Now add mashed spinach add few cups of water if necessary and let it boil fro some time.
10.Add fried paneer cubes to the content mix it well slowly.
11.Add salt, chillipowder, coriander powder
12.Add garam masala, kassori methi.

Now it time to eat. Generally you can serve this dish with jeera rice, parotha, chapthi e.t.c
Here it's lunch time so i prepared jeera rice..



Wow awesome i finished all the rice the gravy excellent and the paneer very soft.. yummy dish.

Bhel Poori

Now it's chat time ...
A well know item from North part of India

Ingredients
1 cup of puffed rice (roast it well)
1 cup bomaby mixure
few peanuts(roast it well)
few chetni dal (roast it well)
half onion slices
tomato slices
green chilli (thin slices)
green chutney
mango (shred into very small slices with the help of shredder) or you can use tamarind chutney instea dof mango
chat masala
lemon juice
2 small crispy poori

Preparation:
I make 2 small poori with all purpose flour i need crispy poori so we have to use either all purpose or maida
Take a big bowl add all the ingredients, with poori pieces(break the poori into small pieces)
close the lid and shake well for mixing all the ingredients
check salt level properly

ready set go.. Switch on the TV keep nice Dvd and start eating and watching

VermiCelli Upma

One of the kids favorite item is vermicelli they love to eat .
We can do many dishes with it the well known dish is upma.

Ingredients
Vermicelli 2 cups
water 2 cups
salt
peanuts
chenna dal
uradh dal
green chillies
ginger
curry leaves
mustard seeds
pinch turmeric powder
onion slices
cilantro

Preparation
1. Take a kadai pour oil add mustard seeds, ginger, curry leaves, green chillies, uradh and chenna dal, peanuts, onion slices one bye one fry it well..
2.Add pinch turmeric powder and salt,
3.Add water let it boil add vermicelli
4.Garnish with cilantro
5.Easy breakfast ready server hot with some tomato pickle

Simple Pepper Potato fry

Are your feeling very tired and restless but still your have to cook something for lunch or dinner then choose try this simple potato fry with rasam and rice..
Kids will love it.

The Combination of Pepper with potato is very good and healthy.

Ingredients
2 medium size potatoes
salt,
water
oil
pepper

Preparation
1.Peel the Potato skin and cut int long thin slices or medium slices
2.Place those slices on microwavable plate sprinkle with some water and microwave 2 to 3 minutes
3.Now take out from the microwave sprinkle with salt kee aside
4.Take a kadai pour oil (no need to pour more oil) once oil get heat fry all the slices on high flame, stir it frequently otherwise it will burn.
5.Now add pepper powder
6. It's ready

Chicken with Coconut Cream

This recipe is suitable to the people who love more gravy.

Ingredients
1/2 kg chicken
1/2 potatos (optional)
cinnamon stick - 1 inch thin
cloves- 2
cardamon- 2
bay leaf- 2 small
chilli powder - 1/2 teaspoon
ginger garlic paste - 1/2 teaspoon
coriander powder -1 teaspoon
cup of coconut cream(available in Korean and Chinese stores )
onions- 1 big
tomaotes - 2 small
mustard seeds
pinch cumin powder
1/4 teaspoon pepper powder
curry leaves
garnishing cilantro, spring onion


Before Cooking:
Apply pinch turmeric powder to chicken marinate 5- 10 min wash it. IT removes the odd smell and bacteria

Preparation:


1.Take a kadai pour oil  add mustard seeds, curry leaves, cinnamon, cloves, cardamon, bay leaf,onion slices fry it well.
2.Add tomato slices and ginger garlic paste fry it well
3. Add chicken and potato slices stir well
4.Add turmeric powder, chilli powder, coriander powder, salt, pepper powder, coconut cream
5.Pressure cook on low flame until u get 1 whistle.
6.Turn off the flame once it get warm open the cooker lid and garnish with spring onions, cliantro.


This will nicely go wiih rice, parotha, chapathi

Navaratan Kurma

I love 'North Indian' dishes specially Paneer, Veg dishes, malai kofta, e.t.c. Long back I tasted this dish in 'Turmeric Indian Restaurant' , it was awesome. Later , I tried to get good recipe, finally i got nice recipe.


Ingredients
Cumin seeds
bayleafs
2 cloves 
paneer cubes few
onions
tomatos
kasoori methi powder
garam masala
mixed vegetables like Cauliflower,red and green bell pepper, potato, carrot, peas, corn, beans
fruits any combination
dry fruits like rasins, cashews

milk
ginger garlic paste 1/2 spoon
turmeric

cilantro
Cheese Cream 1 teapoon


Preparation.
1. Take a bowl of all veggies and fruits wash it keep aside.
2. Take a kadai pour butter or oil add bay leaf, cloves n cumin seeeds.
3. Now add onion slices to that fry it until it turns golden brown.
4. Mash the fried things keep aside.
5. Add tomato slices to it fry it well.
6. Mash the fried tomato make a paste.
7.Soak the cashews in water microwave it.
8. Make a paste add to the existing mashed paste.

9. Kadai same kadai add few drops of oil and add all the mashed contents fry it again.
10. Add the veggies, shredded paneer and fruits.
11. Add ginger garlic paste, garam masala, kasoori methi, turmeric, salt, whipping cream.
12. Garnish with cilantro
13.Serve hot with chapathi, parotha,e.t.c
