Chicken Puf

Ingredients
Chicken Mince 1/4 kg
ginger garlic paste
onions
salt
chillies
oil
pepper powder
Short Crust Pastry Sheet cut into 4 portions /each sheet

Preparation:
1. Clean the chicken with turmeric and keep a a side.
2. Take a pan add oil fry onions,veggies(optional), fry it and add chicken and other ingredients until it makes thick and cooked.
3. Let it comes to room temperature.
4. Take a pastry sheet fill it with curry and close the ends and fold with wet hands and fry into hot oil , keep in mind flame should be medium to low otherwise it will burn.




Indian Chicken with Indonesian Rice Stick Noodles

Ingredients for chicken Marianation:
1 Kg Boneless Chicken
Ginger garlic paste - 1 Tablespoon
Salt
Turmeric
Chilli powder - According to your spice level
Coriander Powder -Double ratio of Chilli Powder
Garam Masala- 1 Tea spoon
Tandoori Masala - 1 Tea spoon


Steps to make Chicken :
1. Marinate Chicken with turmeric for 2 minutes and clean it.
2. Apply remaining ingredients and marinate for few hours or whole night in fridge and fry it well before cooking.

Noodles:

Boil the water and add salt  once it boil add rice stick noodles until it cooks and shift into cold water and keep aside.


Ingredients:

Onions
Vegetables
oil
salt
pepper powder
Fried boneless chicken
Roasted peanuts and Red chillies make a fine powder for garnish

Preparation:
1. Take a wide non stick pan add oil then add all the vegetables and fry it .
2. Add the Chicken too and mix well and fry it.
3. Add the cooked noodles and mix well reduce the flame.
4. Add salt and Pepper (keep in mind salt is there in chicken and salt is there in noodles , add less salt to the vegetables) .
5. Garnish with Roasted peanuts and red chilli powder.

Hot Chicken Wings

Chicken Wings one of the kids favorite dish, my husband love Peri-Peri, Spicy hot wings from Nando's. I generally do lollipops with wings this time i tried skinless hot chicken wings.

Marination:
Clean the chicken wings(removing skin, fat apply turmeric and clean it with water)10 pieces
Lemon juice - 1 teaspoon
Salt- required
chilli powder - teaspoon
Coriander powder- 2 teaspoon
Ginger garlic paste- 1 table spoon
Oil - 1 teaspoon
garam masala - 1/4 tea spoon
Fresh grounded peper - last while placing them to cook


Cooking:
1. Pre heat the oven 180C under fan forced for 20 min
2. Place the wings in the tray spray oil on it.
3. Reduce the Oven temp to 150 and cook the wings for 30 min both sides if needed depends on your oven type.

Serve hot.

I served with Garlic bread(not in the picture).

Malai Murg Kebab

First time i tried this Murg kebab i love kebabs

Marination :

Bonesless Chicken thigh fillets - 1/2 kilo
Marinate with the following ingredients over night
Cheese shredded -1/2 cup
White pepper - 1 tea spoon
Green chillie paste - 1/2 teaspoon( adjust according to your spice level)
Ginger garlic paste - 1 tea spoon
Curd - 1/2 cup
Cheese cream - 1/4 cup
salt - required
Cashew paste- optional


Cooking :
Before the heating the grill keep the chicken marination outside until it comes to room temperature.
Heat the hot plate and apply oil spray and place the chicken pieces cook under medium to low flame.

Serve with grilled veggies

Grilled Maryland Chicken

Ingredients
Mary land chicken pieces - 6
Cup of curd
Lemon juice - 1 tea spoon
Coriander leaves -few
Kasoori methi leaves - few
Ginger garlic paste - 1 table spoon
Fresh ground pepper - According to your spice level
Garam masala - 1/4 tea spoon
Tandoori masala- 1/2 Teaspoon
Chilli powder and coriander powder -1:2 ratio teaspoon (1 tea spoon chilli powder 2 tea spoon coriander powder)
Oil - 1 tea spoon
Marination:
Clean the chicken by applying turmeric powder and clean with water.
Mix all the ingredients and marinate the chicken over night

Cooking :
Heat the hot plate under medium to low flame and spray the oil once it get heat and place the chicken and cook under covered until both sides cook well.


Serve hot Yummy

Indian Chicken with Indonesian Rice stick noodles

Ingredients

Indonesian rice stick noodles (please there will be number of varities please choose the one image on pack is elephant and wrote rice vermicelli in indonesian and english language)
Salt
Pepper
Chilli flakes
Peanut and red chilli dry fry and make a powder
veggies- Onions, carrots, bell peppers, peas, beans
Chicken boneless thigh


Chicken marination:
Cut the bonessless chicken into thin long slices and marinate with Indian style with chilli powder, gingergarlic paste, salt, coriander powder.

Cooking :
1. Take large nonstick cookware boil the water 3/4 and once water getting boil add the noodles and turn off the flame.
2. When noodle stick become soft remove and filter all over and keep those in cold water.
3. Take a wide fried rice kadai pour oil add onions(big slices), Veggies(small thin slices) fry and add chicken fry it well with chilli sauce and chilli flakes(optional).
4. Add ajanamoto (optional)
5. Cut the th noodles( i usually cut into 1 to 2 inch kids feel free to eat with spoon i usually pack in their lunch so it will be easy.
6. Stir well with sufficient salt, pepper.
7. Atlast add roasted peanut and chilli powder to it turn off the flame and close the lid.

Indian Chicken pizza

In generally i use chicken breast in pizza but this is different not the breast meat. Chicken tigh boneless meat.


Ingredients:
Pizza base
Pizza sauce
Pizza cheese
Italian herbs
salt
pepper
chilli flakes -Optional for spice level
Mixed vegetables
Chicken boneless thigh

Marinate the chicken with ginger garlic paste, salt, chilii powder, and fry it.


Preparation:
1. Spread the sauce
2. Sort the veggies
3. Add salt, pepper, chilli flakes, Italian herbs
4. Spread some cheese
5. Add chicken spread cheese


Baking:
1. Preheat the oven between 150- 180 C (Depends on the oven type) for 10 min
2. Place the pizza and bake for 10 min.

Italian Vegetable Fettuccine Alfredo with Indian Lollipop Chicken

Ingredients to make Veg Fettucine Alfredo:
1/2 pack of Fettucine (I used 100% Durum wheat Semolina) from the Shop
Fresh ground pepper corns
Italian herbs
1 cup of mixed vegetables with thin cut.
salt
Mozzarella cheese but Parmesan is the right combination (I don't have so i used Mozzarella shredded cheese)
1/2 cup of Tomato pasta sauce with herbs and garlic.

Preparation:

1. Take a wide pan boil the water with salt and add fettuccine cook until it become soft and ready.
2. Shift that into cold water and let it take rest.
3. Take a wide pan put butter or olive oil add garlic, veggies fry it.
4. Add salt, pepper crushed corns, Italian herbs and sauce with cheese
5. Mix the cooled fettuccine and close the lid turn off the flame.
6. It will cook with the remaining temperature.

Lollipop Chicken with Chicken Wings

Ingredients
Chicken Wings -10
plain flour
bread crumbs
salt
ginger garlic paste required according to your spice level
oil
chilli powder
Coriander powder
Food color pinch
garam masala
Rice flour
Tandoori masala
Kasoori methi
Preparation:
1. Clean the wings if possible the skin and cut into two portions and pull the meat to one side. Example u will get two Lollipops with one Chicken Wing.
2. Marinate all the ingredients except plain flour and bread crumbs and keep aside.
3. Take a wide pan pour oil .
4. Once oil is heat take one chicken and dip into the flour and then bread crumbs and fry it until it cooked all sides.

It's a yummy one for kids, They love to eat like a snack time or side dish.

Chicken Pakora

My elder son loves chicken pakora like anything , he likes to eat every day.

Ingredients
1/2 kg Chiken boneless
1 table spoon Gram flour
1/4 table spoon of Rice flour
1/4 table spoon of corn flour
Green chilies slices -4
Onion long slices - 1 big
salt - Required
Curry leaves  - few
Tandoori Food color
Baking soda pinch
Oil for frying

Preparation:
1.Take a wide vessel add one by one mix well marinate 2 minutes
2. Take a kadai pour oil and on medium flame.
3. Fry the little amount of meat fry it well until it turns crispy.
4. I mostly serve as a evening Snack or some guests visit my home then i make it.

Easy Idiyappam with Chicken Kurma







After my marriage i tasted this one at Kerala that was the first time till that time i never heard the name and never ate. You will find this in Tamilnadu and Kerala side. I tried when i was India but it will take bit hard and take time. After moving to Australia when i was searching for the right flour in the grocery story one women suggested me easy idiyappam mix and i tried it unbelievable so easy and very quick.
For steam cooking i used Electric rice cooker and Idiyappam holders please see the picture above.
If you those things in wooden one it will be very good.


Ingredients:

MDK Idiyappam String Hopper Flour (wheat or Rice)
Normal Water(Room temperature)
1.Take a wide vessel pour the required flour add little by little water make a nice dough and cover with wet cloth keep aside.
2. Switch on the Electric Rice Cooker with half level of water in the Vessel boil the water.
3. Take Vegetable Steamer tray of the Electric rice cooker place it.
4. Take a hopper machine press the hoppers in the hopper holder and keep the holders in the Electric rice cooker Vegetable steamer rack and cook for 2 or 3 minutes until it wont stick to your hands.
5. Shift those in hot pack and again use hopper machine for next hopper.


Chicken Kurma:
Ingredients
1 kg Skin less Chicken
1 table spoon Gingerly oil
few curry leaves
1 inch cinnamon stick
cloves 3
Cardamom cloves- 2
Poppy seeds - few
mint leaves - few
Coriander leaves - few
1 large onion cut into slices
2 medium size tomatoes
curry leaves - few
Turmeric -pinch
Chilli Powder - Required
Coriander Powder - Required
Pepper seeds
Cumin seeds
Mustard seeds
Green chillies
Salt
Ginger Garlic Paste - 2 tea spoons

Preparation:
1. Clean the chicken applying turmeric and clean with water.
2. Take a vessel pour gingerly oil add mustard seeds, cinnamon, Cloves, Cardamom , Cumin seeds, Green Chillies,curry leaves, poppy seeds, pepper seeds, fry it and add onion slices fry until it turns golden brown and add tomato slices fry it.
3. Cool it and mash like a pate.
4. Take a Pressure cooker keep mashed masala and chicken all remaining ingredients except coriander leaves with i small cup of water and pressure cook on medium flame for one whistle.
5. Garnish with coriander leaves rice with rice, Idly, Dosa, Idiyappam e.t.c



We can make Red String hoppers by using Red Rice u will get the flour in the stores

I served with Fish Curry (South Indian)

Italian Grilled Chicken Breast

Delicious one i always love to eat chicken breast on hot plate instead of pan cooked.

Ingredients
1 kg chicken breast cut into thin fillets

marinate with the following ingredients
salt
pepper
olive oil
Italina herbs
lime leaves
Garlic paste
ginger paste
atleast for 4 -5 hours inside the fridge

Method:
heat the hot palte under medium to low flame cook both sides
serve with ranch or other dressings

Indian style Veg Sandwiches with Western style Chicken Sausages

Serving Size 3 people

Ingredients
6 Whole Grain Sandwich Bread slices
2 potatoes
1 Small red onion cut into long thin slcies
pinch ginger
cumin seeds
curry leaves few
mustard seeds few
green chilli -1 cut into thin circles
1 small toamto (optional)
Coriander leaves  few
oil - 1/4 tea spoon
salt
Turmeric
pinch of Garam Masala (for flavour)
pepper powder (According to their spice level)
Sandwich Press for making the Sandwiches
3 Chicken Sausages
Ketchup for dipping

Preparation:
1. Make a veg Curry for stuffing the sandwiches
a. Boil the potatoes and mash it well.
b. Take a vessel pour oil once oil getting hot add mustard seeds, cumin seeds, curry leaves, ginger, onion slices, chilli slices fry it well.
c. Once onion get fried add mashed potato and tomato salt, turmeric, pepper mix well and at last garnish with coriander leaves .
2.Take a Sandwich presser keep the one slice of bread and spread the potato stuff and cover with the other bread slice and close the sandwich presser and once it get ready take it out from the press.
3. Coming to Chicken Sausages u will get these sausages in the super markets once it come to room temperature either grill on the Grilling or else take a tawa keep the flame on lower medium and once it get heat tawa the sausages and serve hot with the sandwich and sausages with ketchup or Ranch..

Healthy and Tasty food to small kids... and very Quick dinner to Adults..

Chicken Kebabs

This is for the Non-Veg people...

Ingredients
1 kg Breast meat of Chicken
BBQ satay marinade Sauce
Garlic
white pepper
salt
lime juice
2 table spoons of curd
lime leaves
Mint flakes
Italian Mixed Herbs
olive oil
Bamboo Sticks
1 Red Onion
Bell Peppers

Preparation:
1. Soak the Bamboo sticks in Warm water for 20 minutes.
2. Cut the meat into long thin slices to arrange on Bamboo sticks.
3. Marinate the Meat with all the ingredients except onion and bell peppers.
4. Keep inside the fridge fro 20 to 30 minutes.
5. Sort color wise.


Preheat the grill and grill it on hot plate grill atleast 15 minutes both sides...

BBQ Marryland chicken

This one really good during BBQ times but i don't have BBQ right now so i did on the regular oil.. If you have BBQ try it delicious

Ingredients

4 Marryland Chicken skinless
1 table spoon ginger garlic paste
1/2 cup curd
few curry leaves
few pepper corns
few coriander seeds
few cumin seeds
3 green chillies
1 medium size onion
salt
chilli powder
3 cloves
1 medium size cinnamon stick
1 bay leaf
2 cardamon
few fennel seeds

Preparation:
1. Clean the chicken and keep nice holes with the fork for the marination.
2.Take a bowl add curd, chilli powder, coriander powder, salt, ginger garlic paste mix well and marinate the chicken on it for 1 hour inside the fridge.
3. Mean while mix all other masala ingredients and make a nice paste and marinate for 5 minutes with the chicken and grill it or fry in the pan under low flame.






Serve with the freshly cut veggies...

Thai Chicken Noodle Soup

After Indian food my vote goes to Thai food especially soups. That too with noodles yummy kids will love it.
Whenever i start think about healthy food then my vote goes to soups and salads.

Ingredients
2 medium pieces of chicken
1/4 bowl noodles
4 -6 Macaroni
pepper
salt
Ajanamotto
1 liter Veg stock or Barley water (I used Barley water)
1/2 cup of mixed veggies
2 cloves of garlic
1 spring onion slices
onion small size
Making Barley water:

Soak the Barley seeds for 1 hour and pressure cook for 4-5 whistles on medium flame once it get watm mash it and mix with water and make a liquid consistency.

Preparation:
1. Take pressure cook clean the chicken and pressure cook the chicken on medium flame for 1 min.
2.Once the chicken cooked , open the lid and seperate the chicken bones from the flush.
3. Take a kadai pour few drops of oil add garlic crushed, onion slices, veggies and fry it well.
4.Add salt, pepper, noodles, Macaroni, cooked chicken pieces to it and cook for 15 min on low flame until all items cooked well.
5.At last garnish with spring onion slices.

Chicken Dum Biryani (Chicken Biryani with Pressure Pan)

This is other variety of chicken biryani or pulav we cook everything in pressure pan.


Ingredients
Fennel seedsfew
curry leaves few
coriander leaves few
mint leaves few
spring onions -2
Ginger Garlic paste - 1 teaspoon
Chicken Drum stick - 4 big
3 green chillies
1/2 cup curd
pinch turmeric
chillipowder - 1/2 teaspoon
coriander powder - 1teaspoon
salt
half lemon slice
garam masala - 1/8 teaspoon
Biryani masala - 1/4 teaspoon
star anise -2 or 3
cinnamon stick - 1 medium piece
cardamon - 3
cloves - 2
bay leaves- 2
2 cups Basmati rice (i used regular rice in the picture)
1 medium size onion
1 medium size tomato


Marination :
Clean the chicken drumsticks with turmeric and water , create some gaps with fork to marinate well..
Take cup curd add ginger galric paste, salt,chillipowder, corinader powder marinate 1/2 hour, squeeze lemon juice also

Preparation:
1.Take a pressure pan pour oil add fennel seeds, curry leaves, star anise, cinnamon stick, cardamon, cloves, mint leaves.
2.Add onion slices fry well..
3.Add tomato slices fry well.
4.Once it get fry remove and keep in some bowl.
5.Use the same pan to saute marinated chicken drumstick for 10 mintues.
6.Once chicken drumsticks gt cook 1/2 then add onions and masala to it.
7.Fry some time.
8.Now add required water (keep one thing on mind chicken will have some water and also on green and vegetables so try to reduce the water content and salt already added to chicken so no need to add salt again).
9.Now add cleaned rice to it  keep srping onion slices and coriander leaves slices on top of it. pressure until get 2 vistles..


Note: Here i serve the chicken biryani with egg also. For egg i boil it for some time and later remove the shell and add bit salt and pepper and roast it little bit and add to the Biryani at last.
Serve hot with Cucumber - carrot raita

Special Indo-Mexican Dinner

I love special meals thats the reason i always make different dishes with different combination..

Here i prepared


1.Veg Samosa (i used frozen one)
2. Veg Wrap (Home made Wrap)
3. Tandoori.Chicken thighs(Home made Chicken thighs)

1.Vegetable Samosa
I bought frozen vegetable samosa big pack from Costco just take 4 samosa and preheat in microwave and light fry in oil.

2.Vegetable Wrap

Ingredients
mixed vegetables
lemon slice
salt
pepper powder
shredded cheese
Chapathi (home made) or tortillas











Now making wrap

once you done cutting vegetables and making round chapthi.. just before eating take a bowl add mixed veggies how much a person (like if kid means can't eat much  but adult means we can add more veggies ) need and salt, lemon juice, shredded cheese, pepper powder and microwave 1 min and wrap in chapathi done...

Chicken Sandwich

The easy and healthy food is making sandwich. Generally my kids try to remove the raw vegetables, this is best source of raw veggies to kids.

Ingredients

Sandwich bread slices -2 (You will get in super market)
Cheese Spread (you will get in Cheese section)
lettuce - thin slices few (fresh lettuce i use)
Cucumber thin slices -3 or 4 (fresh cucumber i use)
Tomato slices (thin) 3-4 (fresh organic tomato i use)
Cheese Slice - 1 (you will get in cheese section)
Thin Chicken slices  (you will get in meat section)

Preparation:

Taka Non -Stick tawa heat on low flame meanwhile

1.Take a cheese spread and apply very light cheese spread on inner sides of bread slices (to stick veggies well by that kids never remove the veggies seperatly)
2. After that keep lettuce, cucumber, tomato slices layer wise.
3.Now add chicken slices to next layer.
4.Add cheese slice -1 (low fat)
5.Close with other bread slice.
6.Compress it slowly with your hands by that sandwich become very thin next toast both sides of sandwich on low flame.
7.It gives crispy so kids love it to eat. just cut into two slices..

One sandwich is sufficient to one adult and one sandwich will come to 2 small kids like below 5 year kids.


Note : If  you don't have cheese slice you can substitute with shredded cheese.. here i use very less cheese that helps to stick the raw vegetables to bread..


I usually serve this sandwich with fresh homemade cup of Orange Juice very healthy and tasty..

Tandoor Chicken


Ingredients:

For 2 drumsticks

marinate with these masala before day night

Masala preparation:

1 table spoon curd
l/2 teaspoon chilli
1 teaspoon coriander powder
pinch garam masala
pinch tandoori masala
salt
pin cumin powder
few drops of lemon juice
pinchturmeric powder
1/2 teaspoon Ginger Garlic Paste
pinch tandoor food color
maxi chicken and masala marinate well like 1- 2 hours kin fridge


Preparation

1.If u have BBQ Grill and home Tandoor Oven then just bake it on that. otherwise,
2.take a vessel pour bit oil and fry on medium flame
or bake at 300 degree for 20-30 minutes(depends on oven)
3.If u r baking in oven please apply butter at last on top the chicken
4.Take TissueTowel and keep on top place fried chicken pieces.

U will love it..... enjoy your chicken

The yummy chicken ready serve this hot with tomato soup or veg salad as light dinner.
