Indian Cucumber Dal with Home Made Plantain Chips

I love Dosakaya pappu and my kdis love plantain chips as side dish. I already submitted plantain chips recipe in my blog.

Now Dasakaya Pappu recipe
Ingredients
1 Cup toor dal
1 Medium size Indian Cucumber
3 Spicy green chillies
Turmeric Pinch
salt
oil
chilli powder
coriander powder

Seasoning
2 red chillies
2 medium size garlic crushed
Split uradh dal few
Chenna dal few
5-6 Curry leaves
Mustard Seeds few

Preparation:
1. Take a Pressure cooker soak toor dal with water 5 minutes and add Indian Cucumber Slices to it.
2.Now add pinch of turmeric and green chillies.
3.Pressure cook until get 3 vistles
4.Taka another kadai pour oil.
5.Add mustard seeds, garlic, dals, curry leaves, red chilli powder, coriander powder mix with cooekd dal.


Serve hot with plain rice and ghee, pickle... Yummy

Thotakura Pappu kodiguddu porita

I kept telugu name greens dal with egg bhuji

Ingredients for Thotakura pappu
1 bunch of thotakura
1 white onion
1 tomato
2 green chillies
pinch of turmeric
1/2 cup toor dal
salt
oil
tamarind juice 1/2 bowl
chilli powder
coriander powder
mustard seeds
curry leaves
garlic cloves -1 big shredded
chenna dal
2 red chillies
uradh dal.


Ingredients for Kodiguggu Porita
2 eggs
1 red onion
3 green chillies
few curry leaves
few coriander leaves
garlic cloves -1 shredded
salt
cumin seeds few
black pepper powder
oil


Preparation of lentils:

1. Take Pressure cooker soak toor dal for 10 minutes add pinch of turmeric .
2.Clean the thotakura bunch cut into pieces with stems and leaves add to the pressure cooker.
3.Slice the white onion add to the pressure cooker.
4.Slice the tomato add to the pressure cooker.
5.Add green chillies close the lid and pressure cook on low flame until 3 vistles.
6.Now squeeze the tamarind juice keep aside.
7. Take another kadai pour oil once it get heat add red chillies, mustard seeds, split dals, curry leaves, garlic, chillipowder, coriander powder and mashed cooked dal mix well with tamarind juice and salt.
8. Let it cook some time on low flame.
9.Serve hot with plain rice.

Preparating Egg Bhuji:
1.Cut the garlic cloves, curry leaves, green chillies, red onion, coriander leaves.
2.Take a kadai pour oil add cumin seeds, mustard seeds(optional), shredded garlic, curry leaves,green chillies, red onion slices one by one and fry .
3.Take a other bowl break the egg shell and beat with the help of fork make sure weather egg white and egg yellow got mixed well.
4.Now add the beaten eggs to the curry with salt, pepper powder, stir well other wise it will burn.
5. Add coriander leaves and mix well..

Herbs Butter Milk

This is for who is suffering with UTI and who is carrying baby..

This butter milk helps to clear all urinary track infection diseases

Ingredients

1 cup home made curd
2 green chillies
10 -15 fresh curry leaves
2 long thin coriander leaves with stems
salt
water.

Preparation:
1.Clean all herbs and chillies
2.Take a mixykeep chillies, herbs and butter milk grind it nicely.
3.Last add salt and water if u want add lemon juice to.

Lentils soup with coconut

The dish also called as Dal rasam, Parpu Rasam, Pappu Charu came well and delicious with nice side dish..

I usually prepare this rasam when i have nice fish fry or masala egg fry feeling bit lazy bcoz of dull weather.

Ingredients
masoor dal - 1/4 cup
Whole peeled tomatoes or cooked tomatoes paste - 1/2 bowl
tamarind juice - 1 bowl
garlic cloves - 1 clove big size shredded into small pieces
2 green chilli's
2 red chillies
mustard seeds
curry leaves
chenna dal
uradh dal split
1/2 teaspoon rasam powder
pinch of turmeric
salt
coconut shredded 1/2 teaspoon
oil
coriander leaves to garnish at last


Preparation:
1.Soak masoor dal fro 10 minutes in water add pinch of turmeric powder and green chillies , pressure cook for 3 vistles.
2.Take a kadai pour oil add mustard seeds, red chillies, shredded garlic, curry leaves, dals fry it well and add cooked dal and tomato paste and tamarind juice.
3.After boiling some time add salt and rasam powder, coconut shredded to it stir well.
4. Now add coriander leaves to it .

Serve with plain rice.

Mint Chutney

I love mint chutney finally i tried one recipe came well..

Ingredients
oil
1 bunch of mint
small piece of coconut.
cumin seeds
2 green chillies
tamarind juice
curry leaves
salt

seasoning
uradh dal
chenna dal
2 red chillies
curry leaves

Preparation:
1. Separate the mint leaves from stem and wash it well and keep a side.
2.Shred the coconut and keep a side.
3. Clean the chillies and curry leaves.
4.Now a take a kadai pour oil add cumin seeds,mint, coconut, curry leaves, chillies. fry it well until water will go off.
5.Once it get warm make a fine paste with help of salt and tamarind juice.
6.Pour oil in another vessel and all dals and red chillies, curry leaves top it on chutney.
Serve this with idly, dosa, or  you can serve with plain rice .

And i use this with samosa side dish too..

Palak Alu

Very famous dish from north part of India i genrally serve this dish with jeera rice.

servings size -2

Ingredients

cumin seeds
curry leaves
2 red chillies
2 green chillies
1 small white onion
1/4 bunch of Spinach
1 medium size potato
garam masala pinch
kasoori methi pinch
ginger garlic paste - 1/4 tea spoon
turmeric -pinch
salt

Preparation:
1.Peel the skin of white onion keep aside
2.Peel the potato skin keep aside.
3.Clean the spinach leaves under running water.
4.Now take a pressure cooker keep whole peeled onion, whole peeled potato and spinach in it and swtich off after one Whistle.
5. Once the steam gone take onion mash it well like fine paste.
6.Now take spinach leaves and mash it fine paste with 2 green chillies.
7.Take a potato and cut into medium size slices and fry it oil with bit of slat and keep a side.
8.Taka a kadai pour oil add cumin seeds, red chillies, curry leaves and onion paste.
9.Once the onion get fry add spinach paste fry it well..
10.Now add fried potatoes and mix well with turmeic, ginger garlic paste, salt, garam masala.
11.Cook under low flame for 5 - 10 minutes at last add kasoori methi leaves..


Serve hot with jeer rice...yummy

Chicken Dum Biryani (Chicken Biryani with Pressure Pan)

This is other variety of chicken biryani or pulav we cook everything in pressure pan.


Ingredients
Fennel seedsfew
curry leaves few
coriander leaves few
mint leaves few
spring onions -2
Ginger Garlic paste - 1 teaspoon
Chicken Drum stick - 4 big
3 green chillies
1/2 cup curd
pinch turmeric
chillipowder - 1/2 teaspoon
coriander powder - 1teaspoon
salt
half lemon slice
garam masala - 1/8 teaspoon
Biryani masala - 1/4 teaspoon
star anise -2 or 3
cinnamon stick - 1 medium piece
cardamon - 3
cloves - 2
bay leaves- 2
2 cups Basmati rice (i used regular rice in the picture)
1 medium size onion
1 medium size tomato


Marination :
Clean the chicken drumsticks with turmeric and water , create some gaps with fork to marinate well..
Take cup curd add ginger galric paste, salt,chillipowder, corinader powder marinate 1/2 hour, squeeze lemon juice also

Preparation:
1.Take a pressure pan pour oil add fennel seeds, curry leaves, star anise, cinnamon stick, cardamon, cloves, mint leaves.
2.Add onion slices fry well..
3.Add tomato slices fry well.
4.Once it get fry remove and keep in some bowl.
5.Use the same pan to saute marinated chicken drumstick for 10 mintues.
6.Once chicken drumsticks gt cook 1/2 then add onions and masala to it.
7.Fry some time.
8.Now add required water (keep one thing on mind chicken will have some water and also on green and vegetables so try to reduce the water content and salt already added to chicken so no need to add salt again).
9.Now add cleaned rice to it  keep srping onion slices and coriander leaves slices on top of it. pressure until get 2 vistles..


Note: Here i serve the chicken biryani with egg also. For egg i boil it for some time and later remove the shell and add bit salt and pepper and roast it little bit and add to the Biryani at last.
Serve hot with Cucumber - carrot raita

Curry Leaves Chutney (Karvepaku Pachadi)

First time i make this came well and superb with hot rice and ghee..

Ingredients
few split uradh dal
few chenna dal
cumin seeds
coriander seeds
3 red chillies
1 bowl of curry leaves
2 garlic cloves
salt
tamarind little bit

Note: you can make this chutney without water that will come like powder if u add water it will come like chutney.. i like with water. Curry leaves is very good to health


Preparation:

* Take a kadai pour oil add mustard seeds, cumin seeds, dals,red chilliesand garlic , coriander leaves fry bit
* Add curry leavs fry it well.
* Nicely blend it with tamarind and water,salt.

Serve with hot rice.

Eggplant Peas with Dry Fish curry(Vankaya batani mettalu koora)

Generally dry meat or dry sea food goes well with the Eggplant or Brinjal.

Ingredients

half egg plant
1/2 cup peass
garlic cloves -2
mustard seeds- few
jeera seeds - few
curry leaves - 2 or 3
chillipowder - 1/2 teaspoon
coriander powder - 1 teaspoon
salt
turmeric
cleaned dry fish
1 medium size onion
1 medium size tomato
oil
coriander leaves

Preparation :

* Take a kadai pour oil once it get warm add mustard seeds, jeera seeds, crushed garlic, curry leaves.
* Now add onion slices fry ti well.
* Add  tomato slices well and fry it.
* Add egg plant slices and fry it well.
* Add peas and stir well with salt, turmeric,chilli powder, coriander powder.
* Add cleaned dry fish and mix well and cup of water and cook it under low flame until 10 - 20 minutes.
* Once it cook well Garnish with coriander leaves
It goes well with hot cooked rice.

Beerakaya Royalu (ridge guard with shrimp)

Generally i lvoe dry shrimp wit ridge guard, egg plant and gongura ...delicious dishes yummy...

This dish with raw shrimp and fresh ridge guard

Ingredients
1 medium size ridge guard
2 small red onions
1 small tomato
1/2 teaspoon ginger garlic paste
curry leaves
turmeric
chillipowder
coriander powder
salt
mustard seeds

Preparation:

1.Take a kadai pour oil add mustard seeds and curry leaves.
2.Now add sliced red onion and fry it well until turns golden brown.
3.Later add tomato and ginger garlic paste.
4.Now add ridge guard slices and cleaned raw shrimp mix it well.
5.Add turmeric, salt, chillipowder, coriander powder.
6.Cook under low flame until shrimp cook well.
7.Garnish with coriander leaves.

Serve with hot rice
trust me very good combination u will like it well..

Special Indo-Mexican Dinner

I love special meals thats the reason i always make different dishes with different combination..

Here i prepared


1.Veg Samosa (i used frozen one)
2. Veg Wrap (Home made Wrap)
3. Tandoori.Chicken thighs(Home made Chicken thighs)

1.Vegetable Samosa
I bought frozen vegetable samosa big pack from Costco just take 4 samosa and preheat in microwave and light fry in oil.

2.Vegetable Wrap

Ingredients
mixed vegetables
lemon slice
salt
pepper powder
shredded cheese
Chapathi (home made) or tortillas











Now making wrap

once you done cutting vegetables and making round chapthi.. just before eating take a bowl add mixed veggies how much a person (like if kid means can't eat much  but adult means we can add more veggies ) need and salt, lemon juice, shredded cheese, pepper powder and microwave 1 min and wrap in chapathi done...

Garlic Curry (a tamil nadu dish)

So many people love to eat garlic curry which people made in tamilnadu.. That is very healthy and tasty but we need perfect recipe otherwise we can't eat.
I got this recipe from one my friend she is from tamilnadu.

Ingredients
1 cup tamarind juice
15 peeled garlic cloves
salt
turmeric
powder (roast pepper corn, chenna dal, toor dal, uradh dal, cumin seeds well and make it powder)
Chilli powder pinch
and coriander powder
curry leaves
mustard seeds
coriander leaves.
oil

Preparation:
1.Taka a non stick sauce pan and pour oil once it get heat add mustard seeds, curry leaves and peeled garlic cloves fry it well.
2.Now add tamarind juice to it and let it boil sometime until the curry looks some thick consistency.
3.Now add turmeric, salt, chillipowder, corainder powder (1:2 ratio chilli and coriander powder).
4.And add masala powder which we make already.
5.Let ot cook on low flame some time..
6.Garnish with coriander leaves.
7.Serve with hot rice.

Perugu Charu (Curd Soup)

I do this dish when i have more curd or i feel bit lazy .. just make perugu charu with pepper potato fry.

Ingredients
1 cup curd
pinch turmeric
salt
water
coriander leaves

Seasoing
few chenna dal
few split uradh dal
curry leaves
2 red chillies or slices of 2 green chillies
mustard seeds

Preparation:
1.Take a bowl pour curd,turmeric and salt mix well with the help of fork or spoon or electronic blender.
2.Taka kadai pour oil add mustard seeds, curry leaves, lentils , chillies fry it bit and add the mixed curd.
3.If u feel thick add few water.
4.Let is heat some time and turn off garnish with coriander leaves.

Greens Pasta with Boiled egg and Shrimp

When you see the name, you might surprise what it is and how it will be trust me it came very well and tasty i finish 2 servings do u believe that.. yes it's true. then you want give a try then come, If you are vegetarian then just void the non vegetarian and use only vegetable, it's sounds funny but i am telling you can make vegetable dish or eggtarian dish

Ingredients
Spinach
Brocoli
Green Peas
Green Beans
Cucumber
Green Bell Pepper
Onion - 1/2
Garlic cloves -2
Italian Herbs mixed or your wish list like Parsley, Basil e.t.c
Tomato
Shredded Cheese
milk - 2 cups
Macaroni - 1 cup cup
Water (to boil macaroni)
Salt
1 cup Raagu or Pasta Sauce
Pepper (optional)
Olive oil

Non - Vegetarians
Boiled Eggs - 3
Cooked Shrimp- 1/2 cup or bowl


Preparation:

1. Take a big vessel boil the water and add macaroni and boil on low to medium flame.
2. Stir occastionally.
3.Now shift the macaroni into cold water wash gently with your hands and keep aside.
4.Take a big vessel and pour olive oil little bit.
5.Add shredded garlic and sliced onions fry well.
6.Add one by one greens to it and fry it well.
7.Add  macaroni and shrimp or prawns let it cook some time.
8.Add milk to it and cook some time and add tomatoes and pasta sauce.
9.Mix well with salt and pepper, Italian spices like Herbs.
10. Now mix well and add shredded cheese.
11.Let it cook some time once cheese got melted well mix well and shift to mix vessel and top with boiled eggs.

Ready set go and eat your Greens Pasta

Note : Here i used low cheese and more milk to reduce the fat content.. We need cheese because of half cooked veggies will go well with cheese..

Perugu Garelu (famous dish from South India) or Indian Donuts

Perugu Garelu wow yummy dish and my husband likes. Even me too like it very crispy boondi on top of it.


Ingredients Garelu
1 cup uradh dal
salt
water very less


Making Batter :

soaked 1- 2 hours

make a thin consistency batter adding salt in middle, use very less water with the help of wet grinder.


Ingredients for curd sauce or Perugu sauce:

2 cups of thick home made curd
pinch turmeric
salt
coriander leaves
curry leaves,
2 green chillies or 2 red chillies
channa dal ,
split uradh dal,
mustard seeds,
water

Preparation of Indian Donuts: (see my log for making garelu in other posts)

1. Take a kadai pour half level oil heat it well on medium flame.
2. Dip your hand on hand and take ball size batter and keep a small hole on middle of the garelu and fry it on low flame.
3. I usually make chitti garelu means small size than the regular garelu.
4.Take a plate and place fried items on tissue towel it will absorb excess oil.

Preparation of Curd Sauce:

1.Taka kadai pour few drops of oil let it hot.
 2.Add mustard seeds, uradh dal, chenna dal, curry leaves, red chillies or sliced green chillies, salt, water
3.Don't burn it just it has to heat thats all..


Now soak donuts in curd sauce few hours like 6 hours (according to USA and Australia weather conditions).

Garnish with Coriander leaves or add few cups of boondi on top of it and serve... Imagine it's yummy .

I finished almost 3 pieces...delicious
