Vegetable Spring Rolls

Spring roll Pastry sheets (will get from the Chinese store Around 1$ (AUD) will get 50$)
Onion - thin long slices
Cababge- thin long slices
Carrot- Thin long slices
beans - thin circles

1.Take a pan add oil fry onions, later carrots, later cabbage, later beans and last add salt and pepper.
 2. Cool it.
3. Take a Pastry sheets follow the instructions (sheets has to come to room temperature )\
4. Keep vegetables on one side role it one time and then fold the sides and role till it end. Check the internet images how to role Spring rolls.
5. Fry it in oil.
Serve hot with some dipping sauce

Coriander Chutney with Coconut

I love Coriander Chutney

2 bunches of coriander
1/2 cup coconut
tamarind juice
ginger pinch
cumin seeds.
Green chillies.

Mustard seeds
Curry leaves
Chenna dal
Uradh dal
2 green chilies

Preparation :
1. Take coriander leaves wash and clean it without sand otherwise hard to eat.
2. Take a pani pour little bit oil add coconut shredded , ginger, cumin seeds, green chillies, and coriander leaves and turn it off. Dont fry more.
3. Make a paste with tamarind juice.
4. For seasoning add oil once it hot, add mustard seeds, dals, dry chillies, curry leaves.
5. Top the chutney with Seasoning.

Serve with Idly or Dosa

Chicken Breast with veggies

I copied from one of family friends and bit modified according to Indian Style

Ingredients for Chicken:
Chicken Breast clean it
Marinate with garlic, ginger, curd, lemon juice, salt, pepper, coriander leaves.
Mix well and dip into the plain flour and bread crumbs keep inside the fridge whole night.

Steam cooked whole green beans with salt.
Carrots raw

Boiled and turn into alu jeera style look for the recipe in this blog.

1. Fry the marinated breast into very less oil on both sides few minutes in low flame.
2. Serve with veggies.

Tandoori Chicken with Vegetable Salad

Dressing: Olive oil, Garlic salt , Pepper

Russel Leaves with Shrimp or Gongura Royalu Andra Special dish


Washed and cleaned Greens generally i will get fried gongura from my mum and it is easy to make.
Take 1/4 kg Shrimp (cleaned one)
ginger garlic paste
Onions -1  big
chilli powder
mustard seeds - few
2 red dry chillies
Garlic - 2 cloves
cumin seeds- few
curry leaves -3

1. Clean the shrimp with applying turmeric and wash with water.
2. Apply ginger garlic paste, salt, chillipowder.
3. Fry it well keep aside.
4. Take a kadai fry the onion slices and keep aside.
5. Take the washed leaves and cook it until all water content goes away.
6. Once it get cool mash all onions and leaves separately.
7. Take a kadai pour oil add crushed garlic, mustard seeds, Curry leaves,cumin seeds, 2 dry red chillies and add the onions paste fry it and add greens paste once it get cooked well add shrimp , if required add sufficient water. close the lid and once it cook turn the flame off.

Chicken Puf

Chicken Mince 1/4 kg
ginger garlic paste
pepper powder
Short Crust Pastry Sheet cut into 4 portions /each sheet

1. Clean the chicken with turmeric and keep a a side.
2. Take a pan add oil fry onions,veggies(optional), fry it and add chicken and other ingredients until it makes thick and cooked.
3. Let it comes to room temperature.
4. Take a pastry sheet fill it with curry and close the ends and fold with wet hands and fry into hot oil , keep in mind flame should be medium to low otherwise it will burn.

Pumpkin Pie

2 cups pumpkin puree (steam 500g peeled pumpkin until soft, then puree)  
3 eggs 
1 1/2 cups thickened cream, plus extra to serve  
185g brown sugar 
1 1/2 tsp ground cinnamon 
1 tsp ground ginger 
1/2 tsp nutmeg 
1/4 tsp ground cloves 
1/4 tsp allspice 
Maple syrup, to serve 
Icing sugar, to dust 

250g plain flour 
110g pure icing sugar, sifted 
110g unsalted butter, chilled, cubed
1 egg

1.Place the flour and icing sugar in a food processor and mix for a few seconds. Add butter and process until the mixture looks like breadcrumbs. Add the egg and mix until the mixture forms a ball. Cover in plastic wrap and refrigerate for 30 minutes.
2.Once chilled, roll pastry out on a lightly floured workbench and use to line a lightly greased 23cm fluted loose-bottomed tart pan. Refrigerate for 30 minutes to chill.
3.Preheat oven to 180°C. Line the pan with baking paper, fill with rice and blind-bake for 10 minutes. Increase oven temperature to 220°C. Place pumpkin puree, eggs, cream, sugar and spices in a processor and whiz until smooth. Pour into the tart shell, then bake for 10 minutes. Reduce oven temperature to 150°C and bake for a further 30-40 minutes. Cool, then serve with the extra cream, a drizzle of maple syrup and dusting of icing sugar.
 Note : Got recipe from internet. Tried it came very well and easy.

Chilli Snack or Mirapakaya bajji


Whole Green chillies (remove the seeds and wash it) Select the good shape one.
gram flour
rice flour
Baking soda
pinch of food kesari color

Preparation :
1. Take clean chillies wipe with kitchen towel and keep aside.
2. Make batter with flours ,baking soda, color , salt  by adding little by little water.

3. Dont fry until stuff with filling


Tamarind pulp
Ajwain seeds poder
Asafatodia powder

1. Mix all ingredients and make a thick paste.
2. Fill inside the chillies keep aside.

Main Preparation:
1. Take a wide pan pour oil.
2. Take filled chillies dip into the batter and fry in the oil.
3. Make sure one side Chilli visible by that the chilli also fries well.

Side for serving:
Onions and Coriander slices(Coriander is missing in my picture)
Lemon juice on top of the onions and coriander slices.

Serve hot bajji with Serving ingredients

Indian Chicken with Indonesian Rice Stick Noodles

Ingredients for chicken Marianation:
1 Kg Boneless Chicken
Ginger garlic paste - 1 Tablespoon
Chilli powder - According to your spice level
Coriander Powder -Double ratio of Chilli Powder
Garam Masala- 1 Tea spoon
Tandoori Masala - 1 Tea spoon

Steps to make Chicken :
1. Marinate Chicken with turmeric for 2 minutes and clean it.
2. Apply remaining ingredients and marinate for few hours or whole night in fridge and fry it well before cooking.


Boil the water and add salt  once it boil add rice stick noodles until it cooks and shift into cold water and keep aside.

1. Take a wide non stick pan add oil then add all the vegetables and fry it .
2. Add the Chicken too and mix well and fry it.
3. Add the cooked noodles and mix well reduce the flame.
4. Add salt and Pepper (keep in mind salt is there in chicken and salt is there in noodles , add less salt to the vegetables) .
5. Garnish with Roasted peanuts and red chilli powder.

Fish Cakes

I love fish cakes last month when i went to Costco bought some Thai fish cakes pack but i was very upset with the product it is having very less amount of fish meat and more flour and it tastes more sweet. So thought to try healthy one at home.
1 medium size white fish any fish i used red snapper small one.
fresh garden coriander leaves - 1/2 bunch
Spring Onions - 4
green chillies - 6
Curry leaves - few
Ginger - Pinch
bread crumbs - optional (for coating the cakes)

1. Steam cook the fish for 5- 10 minutes using Baking sheet otherwise fish meat make stick to the vessel.
2. Separate the fish meat from the bones and keep in a mixing Bowl.
3. Add all above ingredients mix well,
4. Blend it with the blender and make a patties.
5. If you have kids at home coat with bread crumbs for crispy.
6. Fry in the oil serve hot.

Hot Chicken Wings

Chicken Wings one of the kids favorite dish, my husband love Peri-Peri, Spicy hot wings from Nando's. I generally do lollipops with wings this time i tried skinless hot chicken wings.

Clean the chicken wings(removing skin, fat apply turmeric and clean it with water)10 pieces
Lemon juice - 1 teaspoon
Salt- required
chilli powder - teaspoon
Coriander powder- 2 teaspoon
Ginger garlic paste- 1 table spoon
Oil - 1 teaspoon
garam masala - 1/4 tea spoon
Fresh grounded peper - last while placing them to cook

1. Pre heat the oven 180C under fan forced for 20 min
2. Place the wings in the tray spray oil on it.
3. Reduce the Oven temp to 150 and cook the wings for 30 min both sides if needed depends on your oven type.

Serve hot.

I served with Garlic bread(not in the picture).

Baked Spinach Stuffed Chicken Breast served with Butterfly pasta garnished dried tomatoSauce

Want to try something healthy with greens :)

This is one sounds good stuffing some healthy inside the meat and baked on the oven with Carbs (pasta).

Ingredients for Chicken:
4 Chicken whole breast

Marinating the chicken whole night with the following ingredients
ginger garlic paste - 1 teaspoon
Fresh ground peppercons
Olive oil
Italian mixed herbs
For more spice (mashed green chillies paste )

Marinate the cleaned chicken breast whole night in fridge with the above ingredients under covered wrap.

Before cooking:

Take shredded cheese and fresh spinach
Create a space to stuff with cheese and spinach together and stitch the ends with tooth peak stick
Coat with egg and bread crumbs.

Preheat the oven under 140 fan forced for 20 min

Place the breast on the Oven tray and bake both sides each side 15-20 minutes.

Butterfly Veg Pasta


Farfalle (Butterfly shape pasta)

Boil the water and add salt to the water and add the farfalle and cook until it cooked.
Shift into cold water clean it keep aside.

Making Pasta

Cooked farfalle
Italian herbs
garlice crushed - 4
1 cup of fresh cut vegetables
cheese mozrilla
Dried tomatoes Pasta Sauce

Take a wide kadai pour olive oil add crushed garlic fry it.
Add Onions slices and fry it
add vegetables fry it
add salt, pepper fry it
add cooked farfalle mix it well
add herbs
add Dried tomato sauce and mix well (I use half bottle for this quantity)
spread the chese on top of it close the lid and after 2 min turn off the  flame.

Now service hot to your family :)
One is healthy other one is for less carbs with more veggies

Malai Murg Kebab

First time i tried this Murg kebab i love kebabs

Marination :

Bonesless Chicken thigh fillets - 1/2 kilo
Marinate with the following ingredients over night
Cheese shredded -1/2 cup
White pepper - 1 tea spoon
Green chillie paste - 1/2 teaspoon( adjust according to your spice level)
Ginger garlic paste - 1 tea spoon
Curd - 1/2 cup
Cheese cream - 1/4 cup
salt - required
Cashew paste- optional

Cooking :
Before the heating the grill keep the chicken marination outside until it comes to room temperature.
Heat the hot plate and apply oil spray and place the chicken pieces cook under medium to low flame.

Serve with grilled veggies

Grilled Maryland Chicken

Mary land chicken pieces - 6
Cup of curd
Lemon juice - 1 tea spoon
Coriander leaves -few
Kasoori methi leaves - few
Ginger garlic paste - 1 table spoon
Fresh ground pepper - According to your spice level
Garam masala - 1/4 tea spoon
Tandoori masala- 1/2 Teaspoon
Chilli powder and coriander powder -1:2 ratio teaspoon (1 tea spoon chilli powder 2 tea spoon coriander powder)
Oil - 1 tea spoon
Clean the chicken by applying turmeric powder and clean with water.
Mix all the ingredients and marinate the chicken over night

Cooking :
Heat the hot plate under medium to low flame and spray the oil once it get heat and place the chicken and cook under covered until both sides cook well.

Serve hot Yummy

Indian Chicken with Indonesian Rice stick noodles


Indonesian rice stick noodles (please there will be number of varities please choose the one image on pack is elephant and wrote rice vermicelli in indonesian and english language)
Chilli flakes
Peanut and red chilli dry fry and make a powder
veggies- Onions, carrots, bell peppers, peas, beans
Chicken boneless thigh

Chicken marination:
Cut the bonessless chicken into thin long slices and marinate with Indian style with chilli powder, gingergarlic paste, salt, coriander powder.

Cooking :
1. Take large nonstick cookware boil the water 3/4 and once water getting boil add the noodles and turn off the flame.
2. When noodle stick become soft remove and filter all over and keep those in cold water.
3. Take a wide fried rice kadai pour oil add onions(big slices), Veggies(small thin slices) fry and add chicken fry it well with chilli sauce and chilli flakes(optional).
4. Add ajanamoto (optional)
5. Cut the th noodles( i usually cut into 1 to 2 inch kids feel free to eat with spoon i usually pack in their lunch so it will be easy.
6. Stir well with sufficient salt, pepper.
7. Atlast add roasted peanut and chilli powder to it turn off the flame and close the lid.


Indian Chicken pizza

In generally i use chicken breast in pizza but this is different not the breast meat. Chicken tigh boneless meat.

Pizza base
Pizza sauce
Pizza cheese
Italian herbs
chilli flakes -Optional for spice level
Mixed vegetables
Chicken boneless thigh

Marinate the chicken with ginger garlic paste, salt, chilii powder, and fry it.

1. Spread the sauce
2. Sort the veggies
3. Add salt, pepper, chilli flakes, Italian herbs
4. Spread some cheese
5. Add chicken spread cheese

1. Preheat the oven between 150- 180 C (Depends on the oven type) for 10 min
2. Place the pizza and bake for 10 min.

Tandoor Shrimp Pizza

Some evening kids want pizza here is my tandoor shrimp pizza.
I generally do two varities one with more cheese for kids and other one with more veggies and less cheese.

2 pizza base medium size
pizza sauce
Italian herbs
Pizza cheese
vegetables - Onions, bell peppers
Chilli flakes
pepper powder

Shrimp - 200 grams
Marinate with tandoor masala, chilli powder, salt, ginger garlic paste, turmeric, Tandoor color and tawa it untill all water goes and cook.


1. Take the pizza base before start decorating Pre heat the oven under fanforced with 150 C for 10 minutes.
2. Place the pizza sauce on pizza base and nicely arrange the veggies one layer salt pepper, italian herbs, again shrimp covered with pizza cheese.
3. Bake it for 10 min.

Before Baking
Note : If your base is burning without cooking the veggies and meat just put a tray of water in the oven last layer.

After Baking

Chicken Drumstick Biryani with potato and Egg

Simple Chicken Drumstick Biryani, whenever i feel bore with cooking i just pick this biryani very easy to make and tasty.

Chicken Drumstick - 1kg
green chillies - 4
Basmati rice - 1 kg (soak 5 min before cooking)
Onions -2 medium cut into long thin slices
Potato - 2 big cut into cubes
Garam masala- 1/4 teaspoon
Biryani masala - 1/4 teaspoon
Fennel seeds - few
cardamon -2
Bay leaf - 2
Cinnamon stick - 1 inch
cloves -2
Ginger garlic paste - 1 tablespoon

Chicken Marination:
1/2 teaspoon chilli powder
ginger garlic paste - 1 teaspoon
Clean the chicken drumstick by applying turmeric and clean with water marinate with the other ingredients whole night. I generally do on friday mornings then i will keep this marination in fridge the whole night.


1. Take kadai pour oil add onion slices fry it until golden brown.
2. Add chicken drumsticks and fry it until water goes away.
3. Add peeled skin potato cubes to it.
4. Once Chicken cooked 3/4 take everything and keep aside.
5. Now take pan cooker add oil and add the cinnamon, cardamon, chillies, fennel seeds, bayleaf, fry it and add cooked onions and chicken stir well with ginger garlic paste.
6. Once it start cooking add required amount water i generally use 1 cup rice 1 1/4 water.
7. Clean the rice and keep aside until all water drip off.
8. Now water getting boil add rice to it and close the lid with pressure weight.
9. If it is electric stove cook in medium to low flame and turn off when u get 1 whistle.
10. If it is Gas top then keep the flame under medium and turn off once u get 2 whistles completed.
Last garnish with coriander and boiled eggs.

Wraps With veg or nonveg or egg

Kids love to eat these wraps and mum's feel very easy to make it in a short period of time.
1. Pack of White Wraps (from store)
2. Cut the greens and vegetables whatever you like.
3. Take Sandwich presser heat the wrap both sides by that it will easy to fold.
4. Place your favorite veggie filling and if you want to add some meat or seafood . In the above picture i added Tandoor Shrimp with the vegetables.
5. Fold both sides and role it.,
6. Press under sandwich presser by that it will seal nice.
7. If you are packing in kids lunch boxes then cut into two slices by that kids will feel easy to eat it.
 Note: You can fill with your favorite fillings. Enjoy the easy meal.

Italian Vegetable Fettuccine Alfredo with Indian Lollipop Chicken

Ingredients to make Veg Fettucine Alfredo:
1/2 pack of Fettucine (I used 100% Durum wheat Semolina) from the Shop
Fresh ground pepper corns
Italian herbs
1 cup of mixed vegetables with thin cut.
Mozzarella cheese but Parmesan is the right combination (I don't have so i used Mozzarella shredded cheese)
1/2 cup of Tomato pasta sauce with herbs and garlic.


1. Take a wide pan boil the water with salt and add fettuccine cook until it become soft and ready.
2. Shift that into cold water and let it take rest.
3. Take a wide pan put butter or olive oil add garlic, veggies fry it.
4. Add salt, pepper crushed corns, Italian herbs and sauce with cheese
5. Mix the cooled fettuccine and close the lid turn off the flame.
6. It will cook with the remaining temperature.
