Easy Idiyappam with Chicken Kurma







After my marriage i tasted this one at Kerala that was the first time till that time i never heard the name and never ate. You will find this in Tamilnadu and Kerala side. I tried when i was India but it will take bit hard and take time. After moving to Australia when i was searching for the right flour in the grocery story one women suggested me easy idiyappam mix and i tried it unbelievable so easy and very quick.
For steam cooking i used Electric rice cooker and Idiyappam holders please see the picture above.
If you those things in wooden one it will be very good.


Ingredients:

MDK Idiyappam String Hopper Flour (wheat or Rice)
Normal Water(Room temperature)
1.Take a wide vessel pour the required flour add little by little water make a nice dough and cover with wet cloth keep aside.
2. Switch on the Electric Rice Cooker with half level of water in the Vessel boil the water.
3. Take Vegetable Steamer tray of the Electric rice cooker place it.
4. Take a hopper machine press the hoppers in the hopper holder and keep the holders in the Electric rice cooker Vegetable steamer rack and cook for 2 or 3 minutes until it wont stick to your hands.
5. Shift those in hot pack and again use hopper machine for next hopper.


Chicken Kurma:
Ingredients
1 kg Skin less Chicken
1 table spoon Gingerly oil
few curry leaves
1 inch cinnamon stick
cloves 3
Cardamom cloves- 2
Poppy seeds - few
mint leaves - few
Coriander leaves - few
1 large onion cut into slices
2 medium size tomatoes
curry leaves - few
Turmeric -pinch
Chilli Powder - Required
Coriander Powder - Required
Pepper seeds
Cumin seeds
Mustard seeds
Green chillies
Salt
Ginger Garlic Paste - 2 tea spoons

Preparation:
1. Clean the chicken applying turmeric and clean with water.
2. Take a vessel pour gingerly oil add mustard seeds, cinnamon, Cloves, Cardamom , Cumin seeds, Green Chillies,curry leaves, poppy seeds, pepper seeds, fry it and add onion slices fry until it turns golden brown and add tomato slices fry it.
3. Cool it and mash like a pate.
4. Take a Pressure cooker keep mashed masala and chicken all remaining ingredients except coriander leaves with i small cup of water and pressure cook on medium flame for one whistle.
5. Garnish with coriander leaves rice with rice, Idly, Dosa, Idiyappam e.t.c



We can make Red String hoppers by using Red Rice u will get the flour in the stores

I served with Fish Curry (South Indian)

UTTAPAM

My husband favorite thing is "UTTAPAM" . Very easy we can make with regular idly or dosa batter with veggies.

Ingredients
1 bowl Dosa Batter
1 onion thin and small slices
coriander thin slices
carrots again thin slices
Tomato (I didn't put)
green chillies thin and circle slices.

Preparation:
1.Heat the Dosa tawa and pour the dosa batter thickly and spread all the veggies on top of it.
2. Add light oil to it.
3. Turn other side and cook well.

I served this dish with coconut chutney..

Note: If Batter looks veyr thick add bit of water.

voollipaya neeti pesarattu (Onion Green lenthil dosa with ghee)

The famous Andhra breakfast "Pesarattu" . In andhra people do different pesarattu very famous breakfast some people like with onions and some like with cashews. Some like golden brown crispy some like dark green soft one... It all depends on their taste people like to eat with rava upma and pesarattu that is called upma pesarattu.

Ingredients
1 cup split moong dal (with skin)
salt
ginger pinch
cumin seeds
green chillies
onion
ghee
curry leaves

Batter Preparation:
Soak the dal 1 to 2 hours depending on their climate conditions
and nicely grind it with ginger, chillies, cumin seeds, curry leaves,salt by adding little bit of water.

Making Hot  Hot Pesarattu:
1.Take a dosa tawa and heat it pour batter and make same like dosa and add small sliced onions on top of it and once it getting ready add ghee to it and turn other side and serve with nice fresh chutney.
2.Most people serve with tamarind chutney or ginger chutney bcoz of good digestion.
3.Here i used onion peanut chutney with curry leaves.

Note: Any lenthils will take time to get digest thats the reason we add ginger, cumin seeds e.t.c all these help to good digestion.

Carrot Rava Dosa

One of my husband favourite breakfast but morning i don't get that time to make to i do this on dinner time.

Ingredients
1 shredded carrot
3 to 4 green chillie thin circles slices
1/2 medium size onion slices
1/2 inch ginger slices
cumin seeds few
1 bowl sooji
1 bowl dosa batter

If u don't have dosa batter then add one cup rice flour with butter milk keep a side few hours then make.




Making Dosa:

mix all the ingredients with the help of water and mix well..
Here we use bit more water bcoz batter should spread all over the tawa

Now heat the tawa and pour the batter edges of the tawa leaving middle empty immediately lift the tawa and spread the batter all over the pan while moving the pan up and down with the help of your hands.

Just opposite to regular dosa there we pour in center spread, here we pour like big ring shape and spread moving the tawa.

Onion and carrot gives sweetness, ginger ,chillies give right spice, cumin seeds,corainder leaves nice flavour and these ingredients r very healthy.

I served this dosa with onion peanut chutney(spicy)

If u want u can add some ghee to the dosa.

Mint Chutney

I love mint chutney finally i tried one recipe came well..

Ingredients
oil
1 bunch of mint
small piece of coconut.
cumin seeds
2 green chillies
tamarind juice
curry leaves
salt

seasoning
uradh dal
chenna dal
2 red chillies
curry leaves

Preparation:
1. Separate the mint leaves from stem and wash it well and keep a side.
2.Shred the coconut and keep a side.
3. Clean the chillies and curry leaves.
4.Now a take a kadai pour oil add cumin seeds,mint, coconut, curry leaves, chillies. fry it well until water will go off.
5.Once it get warm make a fine paste with help of salt and tamarind juice.
6.Pour oil in another vessel and all dals and red chillies, curry leaves top it on chutney.
Serve this with idly, dosa, or  you can serve with plain rice .

And i use this with samosa side dish too..

Perugu Garelu (famous dish from South India) or Indian Donuts

Perugu Garelu wow yummy dish and my husband likes. Even me too like it very crispy boondi on top of it.


Ingredients Garelu
1 cup uradh dal
salt
water very less


Making Batter :

soaked 1- 2 hours

make a thin consistency batter adding salt in middle, use very less water with the help of wet grinder.


Ingredients for curd sauce or Perugu sauce:

2 cups of thick home made curd
pinch turmeric
salt
coriander leaves
curry leaves,
2 green chillies or 2 red chillies
channa dal ,
split uradh dal,
mustard seeds,
water

Preparation of Indian Donuts: (see my log for making garelu in other posts)

1. Take a kadai pour half level oil heat it well on medium flame.
2. Dip your hand on hand and take ball size batter and keep a small hole on middle of the garelu and fry it on low flame.
3. I usually make chitti garelu means small size than the regular garelu.
4.Take a plate and place fried items on tissue towel it will absorb excess oil.

Preparation of Curd Sauce:

1.Taka kadai pour few drops of oil let it hot.
 2.Add mustard seeds, uradh dal, chenna dal, curry leaves, red chillies or sliced green chillies, salt, water
3.Don't burn it just it has to heat thats all..


Now soak donuts in curd sauce few hours like 6 hours (according to USA and Australia weather conditions).

Garnish with Coriander leaves or add few cups of boondi on top of it and serve... Imagine it's yummy .

I finished almost 3 pieces...delicious

VermiCelli Upma

One of the kids favorite item is vermicelli they love to eat .
We can do many dishes with it the well known dish is upma.

Ingredients
Vermicelli 2 cups
water 2 cups
salt
peanuts
chenna dal
uradh dal
green chillies
ginger
curry leaves
mustard seeds
pinch turmeric powder
onion slices
cilantro

Preparation
1. Take a kadai pour oil add mustard seeds, ginger, curry leaves, green chillies, uradh and chenna dal, peanuts, onion slices one bye one fry it well..
2.Add pinch turmeric powder and salt,
3.Add water let it boil add vermicelli
4.Garnish with cilantro
5.Easy breakfast ready server hot with some tomato pickle

Poori with Potato Masala

Poori with Potato Masala

I love poori with potato masala ofcourse my kids too...

one of my favorite breakfast..


Poori

For making poori dough wheat flour with salt and oil
Mix it well and keep aside close with wet cloth

 Prepation
1.Take a Kadai pour 3/4 level oil and boil it well.
2.Take a lemon size dough and make it circluar shape
3. Fry it in oil pressing with the spoon on all sides
4.Turn other side and fry it


Potato Masala:

Ingredients
1/2 kg potatoes
ginger
onion long thin slcies
curry leaves
coriander leaves
jeera seeds
chillies
gram flour
oil
salt
turmeric

Preparation:
1. Boil the potatoes and peel the skin.
2.Take a kadai pour oil add ginger,curry leaves, jeera seeds
3.Add onion slices
4.fry it well with turmeric salt
5.Add potatoes let it fry some time
6. Mix gram flour with some water and pour in that gravy
7. Garnish with coriander leaves

serve with poori

Appam with Drumstick Kurma

 Appam Batter:
2 cups idly rice
2 cups regular raw rice
1/2 cup uradh dal
meethi seeds
salt
Soak all 4 hours n grind it well.It should be very soft.
While grinding everything add salt and water

Items need to prepare appam

Note : While making batter add sufficient baking soda and water it helps to come puffy appam

Preparing the Appam

Heat the kadai with a bit oil spread around the kadai

Pour batter and spread around the kadai (Hold the kadi and turn circular direct to spread batter around the kadai)
Close with lid for some time and take it out .

Appam ready


Veg Kurma
I got this recipe from one aunty.. thanks to her
Ingredients
cinnamon stick
bay leaves
fennel seeds
cuury leaves
cardoman
cloves
onions
tomatoes
drumstick
turmeric
salt
chillipowder
coriander powder
ginger garlic paste
oil
coriander leaves
water

Preparation
1. Peel the veggies skin n cut into pieces
2. Fry the onions well and make it paste
3.Fry the tomatoes and make it paste
4. Take a kadai pour oil add all masala things like cardamon, cinnamon stick, cloves, fennel seeds e.t.c with curry leaves
5. Add onion paste fry it well again
6. Add ginger garlic paste fry it well
7.Add tomatoes paste and fri it well
8.Add veggies what you want mix..Here i used Drumstick and jackfruit seeds
9.Add turmeric, salt, chili powder,coriander powder, cook well garnish with corainder leaves
and some water while cooking...

Serve with kurma with Appam, Dosa, Idi Appam

Onion Dosa

One of my favorite dish is onion dosa.. During my college days i went with my friend Praveena to swarna place restaurant on her b'day party i ate onion dosa it was awesome... Still i remember that onion dosa with sambar and thick chutney..

Ingredients

Dosa Batter
Small thin onion slices
green chillies (round thin circles)
ghee
oil
 
 


Preparing Dosa
Heat the Tava.
I always go for nonstick Tava



Pour batter make dosa and keep onion slices and chillies on it .

 

serve hot with chutney or sambar

Bread and jam

So many kids love bread to eat with jam. so Here we can add cheese to same bread and jam..

Ingredients

2 Slices of sandwich bread
Jam here i used strawberry
Spread cheese

some may add omlet to it. it depends on kids taste

Preparation:

Apply Spread cheese to one bread slice and jam to another bread slice



Now add both slices .. If u liek u can toast the bread before applying jam and spread cheese.. my kids don't like toast bread with jam so i give bit light toast.
 
Now the the bread slices into small pieces by that little hands can pick it easily and eat theirselves

Cheese Bread Toast

Whenever i feel very lazy to prepare breakfast i go for this toast, especially during weekends...

i know most of the people will do this...

Ingedients
2 bread slices(go for sandwich bread)
one cheese slice
few spread butter

Preparation:

Apply butter inner side of the bread slices andkeep one cheese slice between two slices toast both sides...

Kids love this and excellent source of calicium...
u can add veggies with this

Pulka

I love north indian style food but i am not that much good in that. I  saw this pulka in my elder brotherinlaw house his wife prepare very nice and soft pulkas with in a seconds. But i never asked her recipe, i tried myself

Ingredients
take 2 cups 100% wheat flour
Add salt
make a dough with the help of required water
and close it for 1/2 hour with wet cloth

Preparation:
Take a lemon size dough and make a ball
make a round shape pulka (I tried my level best but it is not 100% round shape.. sorry for that)
Take a tawa heat and kee the pulka on it and turn other side
Then bake it on Grill.


Serve hot

Cashew Upma

Ingredients:
 



1/2 cup roasted sooji
onions slices
mustard seeds
jeera seeds
red chillies -2
green chillies chopped
curry leaves few
ginger choped
chenna dal
uradh dal
peanuts
cashews
water
salt
ghee

Preparation
1.Take a kadai heat oil add mustard,jeera,ginger,lentils,curry leaves,peanuts,cashews fry it
2.Add 1 cup water let it boil well
3.Add salt to it
4.Add sooji and stir well
5.keep the lid closed and turn off the flame
6. Add ghee to it

serve with spicy pickle

Poha Upma

Ingredients

1 cup poha soak in water few minutes
ginger chopped
chopped onions
curry leaves
mustard seeds
jeera seeds
green chillies
 

Preparation:
1.Take a Kadai pour oil add mustard seeds,jeera,ginger,curry leaves, onions fry it..
2.Remove the poha from the water and check if any water is there with it.. if little bit water is just remove the water with the help of your hands and mix with the fried items and fry it on low flame
3.Add salt and turmeric and mix well..

This is very easy recipe good for growing kids..

Simply pack to your school going kids



serve with any spicy pickle

Idly



For getting very soft idly










Served with sambar and peanut chutney
Batter Prearation:

1 Cup uradh dal and  6 cups idly rice and 1 cup long grain rice

2. Soak rice in water first for 5-6 hours (depends on weather conditions)
3.Soak Dal separately

Making Batter:

1.First grind the dal well
2.Next grind rice well
3.Later mix together with salt and grind for 5-10 min
4.Keep outside room temp one whole night

next day morning u can prepare idly..

Preparation:

Note: 


Take a required batter add baking soda to it. It helps to come idly very soft


1.Take idly cooker
2.Pour some water and boil it until steam comes
3.Take plates apply bit oil for greasy pour batter on the lids
4.When the water steam is coming out from the cooker reduce the flame to medium level and place the idly plates into close the lid..
5.Cook for 5-7 minutes on medium flame (until u hear whistle sounds of 2- 3 minutes)
6.Switch off the flame and don't open the lid immediately .. wait for sometime time 2-3 minutes
and then open the lid serve hot with chutney


The Idly will be soft and spongy white..
Here i served with onion peanut chutney

and also we can serve with coconut curry leaves chutney
