Ingredients:
Spring roll Pastry sheets (will get from the Chinese store Around 1$ (AUD) will get 50$)
Onion - thin long slices
Cababge- thin long slices
Carrot- Thin long slices
beans - thin circles
salt
Pepper
oil
Preparation:
1.Take a pan add oil fry onions, later carrots, later cabbage, later beans and last add salt and pepper.
2. Cool it.
3. Take a Pastry sheets follow the instructions (sheets has to come to room temperature )\
4. Keep vegetables on one side role it one time and then fold the sides and role till it end. Check the internet images how to role Spring rolls.
5. Fry it in oil.
Serve hot with some dipping sauce

Veg Wheat Upma
Healthy Breakfast
Ingredients
1 inch ginger
1 small onion cut into thin slices
cumin seeds,
Carrots
Beans(optional i didnt have so i didnt added)
peas
peanuts
cashews
oil
salt
mustard seeds
chenna dal
Uradh dal
Broken wheat fine
Preparation:
1. Take a kadai pour oil add mustard seeds, cumin seeds, ginger, chenna dhal, uradh dhal, cashews, peanuts, beans, peas, carrots fry it well.
2. Add 1 glass of water boil it with salt.
3. Add the broken wheat and stir it well.
4. Serve hot with chutney.

1/2 Cup Red onion (long thin slices)
1/2 cup gram flour
1/4 cup rice flour
salt
Green chillies
Ajwain seeds
Preparation:
1. Mix all the vegetables well.
2. Mix with the gram flour without adding water.
3. Add salt and rice flour, Ajwain seeds, green chillies and mix well with little bit water.
4. Fry in the oil.
Serve hot..........

South Indian Mixture- Snack
I love mixture first tried came well after seeing Vasanthy Suresh (one of my friend) in FB thanks to Vasanthy Suresh.
Ingredients
Besan flour
rice flour
salt
chilli powder
oil
curry leaves
peanuts
poha
soaked whole Chenna
Part 1:
1. Making boondi
* Take bowl of besan floor add 1 teapsoon of rice flour salt and mix with water it should be fall from the boondi spoon. (check the consistency)
* Fry the boondi keep aside.
Part 2:
* Take 2:1 aration Gram and Rice flour make nice muruku with the help of muruku maker and keep aside.
* Fry it keep aside.
Part 3
* Take soaked whole chenna keep it for dry on cloth
* Fry it in oil until it turns crispy.
Part 4
* Take a poha and fry it normal heat oil otherwise it will burns keep aside.
Part 5
* Take a kadai pour oil add curry leaves, chenan dal (soaked), peanuts, cashewsfry it nicely
* Add chilli powder and salt mix all the ingredients

Special Indo-Mexican Dinner
I love special meals thats the reason i always make different dishes with different combination..
Here i prepared
1.Veg Samosa (i used frozen one)
2. Veg Wrap (Home made Wrap)
3. Tandoori.Chicken thighs(Home made Chicken thighs)
1.Vegetable Samosa
I bought frozen vegetable samosa big pack from Costco just take 4 samosa and preheat in microwave and light fry in oil.
2.Vegetable Wrap
Ingredients
mixed vegetables
lemon slice
salt
pepper powder
shredded cheese
Chapathi (home made) or tortillas
Now making wrap
once you done cutting vegetables and making round chapthi.. just before eating take a bowl add mixed veggies how much a person (like if kid means can't eat much but adult means we can add more veggies ) need and salt, lemon juice, shredded cheese, pepper powder and microwave 1 min and wrap in chapathi done...

Perugu Garelu (famous dish from South India) or Indian Donuts
Perugu Garelu wow yummy dish and my husband likes. Even me too like it very crispy boondi on top of it.
Ingredients Garelu
1 cup uradh dal
salt
water very less
Making Batter :
soaked 1- 2 hours
make a thin consistency batter adding salt in middle, use very less water with the help of wet grinder.
Ingredients for curd sauce or Perugu sauce:
2 cups of thick home made curd
pinch turmeric
salt
coriander leaves
curry leaves,
2 green chillies or 2 red chillies
channa dal ,
split uradh dal,
mustard seeds,
water
Preparation of Indian Donuts: (see my log for making garelu in other posts)
1. Take a kadai pour half level oil heat it well on medium flame.
2. Dip your hand on hand and take ball size batter and keep a small hole on middle of the garelu and fry it on low flame.
3. I usually make chitti garelu means small size than the regular garelu.
4.Take a plate and place fried items on tissue towel it will absorb excess oil.
Preparation of Curd Sauce:
1.Taka kadai pour few drops of oil let it hot.
2.Add mustard seeds, uradh dal, chenna dal, curry leaves, red chillies or sliced green chillies, salt, water
3.Don't burn it just it has to heat thats all..
Now soak donuts in curd sauce few hours like 6 hours (according to USA and Australia weather conditions).
Garnish with Coriander leaves or add few cups of boondi on top of it and serve... Imagine it's yummy .
I finished almost 3 pieces...delicious

Preparation:
1.Take rice flour roast it without burn it too much
2.Take uradh dal and roast it (flour should be bit heat)
3.Take two flours mix with salt.
4.Now add chilli powder, ajwain seeds, seasame seeds.
5.Add butter or oil make nice dough.
6.Take a kadai pour oil and heat it on medium flame.
7. Take zip log sheet or aluminum foil keep some dough on muruku machine make chekkralu on zip log sheet later with the help of your hand shift into oil..
8.Fry it until it turn nice color.
9.Remove from oil and place it on tissue towel and shift to tight lid container.

Crispy Chekkalu (Andhra Famous Snack)
Today i got some time and also want to eat some Indian snack.. I choose chekkalu which very easy and crispy
Ingredients
2 cups of rice flour
2-3 green chilli
1 inch ginger
curry leaves
soaked chenna dal
roasted peanuts (pealed skin and roasted split peanuts)
water
salt
oil
Making Dough
1.Take a big bowl add rice flour .
2.Make a a paste of chilli, ginger, curry leaves.
3.Add the paste to rice flour and add soaked chenna dal.
4.Roast the peanuts on low to medium flame peel off the skin and split into 2 pieces each and mix all together with the warm water make a nice dough..
5.Take a plastic or plastic ziplog cover keep small amount of dough and make it circular shape fry it in oil.
Note:
Water plays major role and frying time
After coming to Australia i tried with white Rice flour which comes bit white crispy chekkalu than the previous picture in this reciepe.

Kids love every day different variety so i go one day with dosa, idly, poori e.t.c other day do noodles, soup, burger, snadwich e.t.c

Burger bread
cheese slices
tomato
cucumber
lettuce
mayonnaise
Preparation
1.Take a Burger bread cut into two half slices and apply mayonnaise one end (optional if u want more your can apply both sides too).
2. Now keep thin slices of tomato, thin slices of cucumber, lettuce and cheese slice.
3.Close with the other part of bread and eat.
4.If you want microwave it for few minutes and eat.

1 cup of puffed rice (roast it well)
1 cup bomaby mixure
few peanuts(roast it well)
few chetni dal (roast it well)
half onion slices
tomato slices
green chilli (thin slices)
green chutney
mango (shred into very small slices with the help of shredder) or you can use tamarind chutney instea dof mango
chat masala
lemon juice
2 small crispy poori
Preparation:

Punugulu -Andhra Evening Time Snack
It's raining here..Dull weather, i feel like if it happens in India, Definitely i will tell to my dad to bring punugulu from the road side shop.. I love it very much even my kids too..
Today i want to try this at my house..
Ingredients
1/2 cup uradh dal
1 cup rice
coriander leaves
salt
oil
baking soda
Chutney:
chetni dal
oil
curry leaves
green chillies
tamarind juice
Cumin seeds
Chenna dal
uradh dal
2 red chillies
mustard seeds
salt
Preparation:(punugulu)
1. Soak the dals and rice for 4 -6 hours depending up on the climate conditions
2. Grind it thick consistency.
Note: Generally we will add more water to dosa batter here for punugulu we have to add very less water..
3.Add salt and baking soda, coriander leaves
4.Heat the kadai pour more oil
5.Fry it and serve it with nice liquid chutney here like
chetni dal chutney or onion peanut chutney.
Chetni dal chutney Preparation:
1. Taka kadai pour bit oil add cumin seeds, curry leaves, green chilli one by one.
2.Add chetni dal(Roasted split peas) and grind it with tamarind jucie and salt.
Seasoing:
Taka kadai pour very less oil add mustard seeds, dals, curry leaves, red chilli top it on chutney.
Note : you can also make these with your existing dosa batter
the picture below shows prepared with existing dosa batter

Mysore Bonda
Actually i have to say thanks to one of my friend she remind me this dish after seeing in her blog i started trying this dish.. I love this especially in small hotel they prepare very well ..
I can't tell this is exactly same like that hotel bonda but this is 90% same like that

Ingredients
All purpose flour or maida 1 bowl
Rice flour ¼ bowl
Baking soda ¼ teaspoon
Butter milk
Ginger chopped
Cumin seeds
Green chillies chopped
Coconut slices
Salt
Water
Preparation
1.Take a bowl add all purpose flour mix well and add rice flour to it mix well
2.Add baking soda to the mixture
3.Add butter milk slowly to the mixture mix well and cumin seeds too
4.Keep Aside for 10 min
5.Later Add chopped ginger,chillies, coconut slices to it..
6.Marinate it upto 1 hour
7. Take a bowl of water to clean hands while making bonda..
8. Take a Kadai pour ½ level oil and flame should be low..
9.Take little batter with the cleaned hand pour in oil fry it well.
10. it will turn into round small ball side bonda
11. Serve NOT HOT bit cold will be good then only it will become bit soft with coconut chutney.
Aloo Bonda
Very special dish from the' North part of India'
Still i remind, during my childhood when I was going to shirdi to visit Shridi saibaba temple I tasted this on the railway station.. it’s yummy dish try it and let me know
Ingredients
Chopped onion
Cooked and mashed potatoes 2
Turmeric
Cumin seeds
Salt
Curry elaves
Mustard seeds
Green chilli slices

Preparation:
1.Pressure cook the potatoes
2. Peel the skin mash it
3.Take a kadai pour oil add mustard seeds, cumin seeds, chillies,ginger, curry leaves fry it well
4.Add onion slices and mashed potatoes, add salt to it..
5.Switch off the flame let it get warm..Mean while make the batter
6.Take 2 cups of gram flour in another bowl mix salt and baking soda with water
7.Make a batter paste.
8.Add lemon juice to the potato gravy
9.Make cooked potato curry into small balls
Like this
10.Coat that ball with batter and fry in oil on low to medium flame serve hot..
You can serve this dish with ketup to your little kids.

Plantain chips.. kids love it.. we can serve as side dish with rice items or else keep like snacks..

Left over Dosa or idly batter

few curry leaves
jeera seeds
pinch baking soda
Preparation:
1.Cut the onions into small thin slices
2.Cut the chillies into small pieces
3.Add curry leaves and jeera
4.Add baking soda to it
note: some people fry all the ingredients and mix into the batter coming to me i just add raw things to batter and mix well..
4.Now take paniyaram pan i use non stick one which helps to reduce the oil content
5.Pour the batter on it with small spoon..
6. After few minutes turn other side..
7.Serve with any spicy pickle like red chilli pickle or tomato pickle.. or u can serve with regular tomato chutney see tomato chutney recipe in my previous post...

Plantain Bajji
small size plantian
1 full cup besan flour
1/4 cup rice flour
1/2 teaspoon chilli powder
salt
Preparation:
1.Take plantain peel the skin cut into half and then cut them into long thin slices(use slicer)
2.Take bowl add besan,rice flour add salt,chillipowder
3.Mix all with little bit water
4.Add pinch baking soda
5.Take another vessel heat it pour more oil
6. Take each thin slice of plantain dip into the batter and fry it both sides
7. Serve hot with tomato ketchup

This is very easy dish and especially for kids.. they love.. if mom feeling very lazy to cook something so just prepare this dish for your kids... i do same when i feel bit tired i prepare this give to my kids...

5 bread slices(wheat bread or any bread)
2 eggs

sugar

1.Take a bowl add milk,sugar beat it well
2.Add beaten eggs mix it well
3.Take bread slice one by one
4.Dip in the sauce both sides
5.Heat tawa place the the bread add little bit ghee or butter around
6.Turn other side and repeat same

Dosa
Ingredients
Take 2 cups uradh dal soak for 6-7 hours(depends on your local weather)
Take 7-8 cups of sams long grain rice (soak 8-9 hours
Preparing batter:
1.Grind the dal using wet grinder
2.After finished take it into one seperate bowl
3. Later grind the rice
4.At last mix together.. and grind 5 -10 more minutes
5.Keep out side at room temperature
6.Next day Dosa tawa heat it make dosa on it.
.
serve hot with nice chutneys
