Ingredients
1 small pack of Baby Corn
1 inch of Ginger grated
1/2 liter Vegetable stock
Chives few
pepper
salt
1 cup of Coconut Cream
1 table spoon oil
2 -3 Spring onions
1 red chilli
1/2 cup canned Corn
Lemon Grass (if available i didn't added )
1 table spoon soy sauce
Preparation:
1. Cut the baby corn into long slices like each 2 slices
2. Heat the oil add lemon grass, ginger once it get fry add vegetable stock with spring onion slices and coconut cream bring to boil on a open lid.
3. Add canned corn soya sauce, salt pepper and boil under low flame.
4. Atlast add chives and red chilli as topping..
Healthy and tasty Soup ready...

Minestrone Soup (Vegetable)
The Italian famous Soup is Minestrone soup. I love this soup with nice baked garlic bread.
Finally i tried came very delicious.
Ingredients
1 liter Vegetable stock
pepper
salt
1 cup thick cut veggies
penny or shell or macroni
fresh parsley
Italian herbs mixed or basil or oregano
onion
tomato
garlic
olive oil
Preparation:
1. Take a big vessel pour olive oil add whole garlic cloves or crushed(Depending on your choice) fry it.
2. Add onion slices.
3.Now pour the vegetable stock to it and let it boil for few minutes.
4.Add mixed veggies , salt, pepper and close the lid.
5. Add penny or shell or maccroni with small cheery tomato or tomato slices, parsley herbs.
6. Add Italian herbs and boil it bit.
Serve hot with garlic bread

Thai Chicken Noodle Soup
After Indian food my vote goes to Thai food especially soups. That too with noodles yummy kids will love it.
Whenever i start think about healthy food then my vote goes to soups and salads.
Ingredients
2 medium pieces of chicken
1/4 bowl noodles
4 -6 Macaroni
pepper
salt
Ajanamotto
1 liter Veg stock or Barley water (I used Barley water)
1/2 cup of mixed veggies
2 cloves of garlic
1 spring onion slices
onion small size
Making Barley water:
Soak the Barley seeds for 1 hour and pressure cook for 4-5 whistles on medium flame once it get watm mash it and mix with water and make a liquid consistency.
Preparation:
1. Take pressure cook clean the chicken and pressure cook the chicken on medium flame for 1 min.
2.Once the chicken cooked , open the lid and seperate the chicken bones from the flush.
3. Take a kadai pour few drops of oil add garlic crushed, onion slices, veggies and fry it well.
4.Add salt, pepper, noodles, Macaroni, cooked chicken pieces to it and cook for 15 min on low flame until all items cooked well.
5.At last garnish with spring onion slices.

Eggplant Parmigiana with Baked Potato and Carrot orange Soup
I tried different combination with Italian style.
1. Carrot Orange Soup
2. Baked Potato
3. Eggplant Parmigiana
Carrot Orange Soup Recipe:
Ingredients
1/2 kg carrots
1 fresh orange
1 liter Veg stock or Chicken Stock
Italian Spices
pepper
salt
onions
olive oil
Preparation:
1. Take a sauce pan add olive oil 2 teaspoons, add onion slices, carrot slices to it and cook it with closed lid.
2. Now remove it from the flame let it cool down.
3. Mash cooked onion and carrots with nice blender.
4.Take same sauce pan pour the vegetable stock cook on low flame add salt, pepper, Italian herbs and add all the mashed content to it cook on low flame.
5.At last squeeze the orange juice to it and mix it well.
6.Turn off the flame.
Baked Potato
Peel the Potatoes cut into 2 slices each potato and place on the aluminum sheet in a oven tray apply olive oil or butter with brush and bake it until it cook.
Eggplant
Ingredients
1 big eggplant cut into thin circular slices
Beaten egg
Bread Crumbs
Salt
Pepper
Parmesan cheese
Pasta Sauce
oil
Italian Herbs
Preparation:
1. Take the each eggplant slice and dip into beaten egg and coat with bread crumbs and fry it in oil keep aside. (for pure vegeterians can use only bread crumbs with eggplant or plain egg plant will be placed instead of that)
2. Take the Aluminum sheet tray place all the fried slices and bake it under 180 under fanforced heat for 4 to 5 minutes
3. Now add the pasta sauce to cover all the slices add layer wise and salt, pepper, herbs.
4. Now add Cheese as toppings and cook it for 15 minutes or until it get ready.
These dishes always tasty whenever it is fresh and hot.

Vegetable Soup with Baked Salmon Fish
Finally i want to give bit healthy dinner to family so i tried this.
Vegetable Soup
Ingredients
1 bowl of mixed veggies
Cooked 1 cup of barley
Garlic 2 cloves
Spring onions
salt
pepper
few macaroni for taste
Olive oil
Preparation:
1. Soak the barley and pressure cook it.
2. Take a kadai pour olive oil add crushed garlic n bowl veggies and cook it well.
3. Add cooked barley with whole water.
4.Add salt and pepper with macaroni boil on low flame for 20 minutes.
5.Garnish with spring onion slices.
Baked Salmon
Marination:
Take a salmon pieces clean with pinch of turmeric and keep aside.
Make a nice masala with 2 teaspoons of chilli powder, coriander powder, pepper powder, salt,.1/2 teaspoon oil mix the masala and coat with salmon and marinate for 10 minutes
Baking:
Place a aluminium foil in the oven tray and place the salmon slices on top of it.
Preheat the oven 220 and keep the tray inside the oven for 20 minutes and turn the slices and bake agian for 10 minutes at 180 heat.
Note: Remove the skin of salmon garnish lemon juice when u r eating

Lentils soup with coconut
The dish also called as Dal rasam, Parpu Rasam, Pappu Charu came well and delicious with nice side dish..
I usually prepare this rasam when i have nice fish fry or masala egg fry feeling bit lazy bcoz of dull weather.
Ingredients
masoor dal - 1/4 cup
Whole peeled tomatoes or cooked tomatoes paste - 1/2 bowl
tamarind juice - 1 bowl
garlic cloves - 1 clove big size shredded into small pieces
2 green chilli's
2 red chillies
mustard seeds
curry leaves
chenna dal
uradh dal split
1/2 teaspoon rasam powder
pinch of turmeric
salt
coconut shredded 1/2 teaspoon
oil
coriander leaves to garnish at last
Preparation:
1.Soak masoor dal fro 10 minutes in water add pinch of turmeric powder and green chillies , pressure cook for 3 vistles.
2.Take a kadai pour oil add mustard seeds, red chillies, shredded garlic, curry leaves, dals fry it well and add cooked dal and tomato paste and tamarind juice.
3.After boiling some time add salt and rasam powder, coconut shredded to it stir well.
4. Now add coriander leaves to it .
Serve with plain rice.
