Vada Curry

Famous South Indian dish vada curry , very famous in tamilnadu side people love it.

Ingredients for making gravy 
Onion 2 
Tomatoes  2 

Ginger  1.2 tsp
Garlic paste  1/2 tsp 
Turmeric Powder  1 tsp 
Coriander powder  1/2 tbsp 
Red chili powder  2 tbsp 
Curry Leaves 4 springs 
Bay leaves: 2 
Cloves  3 
Cinnamon sticks  1 small
Mint leaves  1 tsp chopped
Coriander leaves few chopped
Fennel seeds : 1tsp 
Salt required to taste

For seasonings: 
Oil 
Mustard seeds few 
Fennel seeds  1 tsp 
Cinnamon stick  1/4 inch 
Curry leaves  few ( nos mentioned above)

Preparation : 
1. Once vada is ready keep side.
2. Now cut the onion and tomato keep aside.
3.Heat oil in a pan, add cloves, cinnamon sticks, bay leaves fry ti bit.
4. Add onions fry it for few minutes till the onions turns brown.
5.Add ginger & garlic paste and fry them until the raw smell goes off.
6.Add the tomatoes with coriander powder, turmeric powder, red chili powder, a glass of water and little salt. Then mix it all together and let it cook for 5 to 10 minutes under closed lid.
7. Turn off the flame and once the ingredients come to room temperature make a nice paste.
8. Take a pan add oil once it get heat add all the seasoning ingredients and later add the masala paste to it with required water.
9.Add mint leaves and a tsp of coriander leaves, close the lid and let it cook for another 5 minutes in medium heat.
10. Once the gravy become nice add the vadas to it and reduce the flame for 5 minutes and turn off the flame.
11. Serve hot with idleis, dosa, rice
